Sheet Pan Dinner with Sausage and Vegetables

You can prepare this sheet pan sausage meal in approximately an hour using any pre-cooked sausage you like. Additionally, this recipe is quite adaptable! Although additional food keeps tightly in the fridge for up to 5 days, it is best served warm and fresh. Add freshly grated Parmesan cheese as a garnish.

Ingredients

  1. cooking spray
  2. 4 tablespoons olive oil, divided
  3. 1 tablespoon chopped fresh rosemary
  4. 1 teaspoon kosher salt, or to taste, divided
  5. ½ teaspoon freshly ground black pepper, divided, or more to taste
  6. 1 (16 ounce) package red potatoes, cut into bite-sized chunks
  7. 1 tablespoon dried onion flakes
  8. 1 tablespoon smoked paprika
  9. 1 tablespoon dried parsley
  10. 1 tablespoon dried oregano
  11. 12 ounces fully cooked kielbasa or Polish sausage, cut into 1 1/2-inch pieces
  12. 1 (12 ounce) bag fresh green beans, trimmed
  13. 1 medium yellow bell pepper, cut into bite-sized strips
  14. 1 medium onion, cut into bite-sized pieces

Instructions

  1. Preheat the oven to 425 degrees F (220 degrees C). Line a baking sheet with aluminum foil for easier cleanup and spray with cooking spray.
  2. Combine 2 tablespoons olive oil, rosemary, 1/2 teaspoon salt, and 1/4 teaspoon pepper in a large bowl. Add potatoes and toss to coat. Place potatoes skin side-down on the baking sheet in a single layer.
  3. Roast in the preheated oven until tender when pierced with a fork, 23 to 25 minutes. Remove from oven; stir.
  4. Mix remaining olive oil, salt, pepper, onion flakes, paprika, parsley, and oregano in the same bowl. Add sausage, green beans, bell pepper, and onion; mix until well combined. Add to the baking sheet; spread in a flat layer.
  5. Roast until vegetables are tender and potatoes and sausage pieces are browned, tossing halfway through the roasting process, 20 to 25 minutes. Serve immediately.
  6. You can make this sheet pan dinner with any type of precooked sausage or chicken pieces.
  7. Any color bell pepper can be used. Other vegetable option are 1 zucchini, sliced into bite-sized pieces, or 3/4 to 1 cup cherry or grape tomatoes.
  8. You can use regular paprika instead of smoked paprika as well.

This was very tasty. I used carrots instead of green beans and cooked them with the potatos. Also used a ring of deer sausage that was given to us. It went together very fast, threw it in the oven and took a nap. I may have slept a little too long since the carrots and potatos were wrinkled up. However – it was still very good. I’ll make this again.

Made recipe as written. Used Turkey sausage. I read review where someone couldn’t understand why they would add minced onion as there is onions in recipe. I used both and it was delicious. The minced onions added additional flavoring to all vegetables as it is mixed in with oil and other seasonings to all vegetables and sausage except potato’s, which by the way were excellent. I could just cook potatoes just like this for other dishes! Takes time to prep, but well worth it. Thank you for sharing this delicious recipe. Wouldn’t change a thing.

We made the recipes pretty exactly, and added smoked tabasco instead of parmesan cheese (since we didn’t have any). Delicious! The leftovers will be for breakfast with eggs and sour dough toast. I also want to try this adding other veggies, mushrooms, and different sausages or very seasoned chicken.

Wow! This was ALOT but amazing! Only made minor changes due to what I had on hand; used baby golden potatoes instead of red, used chopped zucchini from my garden instead of green beans, and used a combo of bologna and kielbasa. Only used fresh rosemary- also from my garden. Everything else – did as written, including bake time. Huge flavors! Delicious! Thank you Willard for an easy and hearty dinner!

I used herbes de provence instead of the rosemary (since that’s what I had, and it contains rosemary) and cut the chopped onion in half, still had plenty of onion. Not sure why the recipe calls for dried onion flakes when you are adding chopped onion in the same step, I will probably leave out the dried onion next time. But over all, very good and very easy.

Very good. Used frozen Brussel sprouts and potatoes with the ham sausage. Put veggies in ziplock bag with oil and spices. Baked at 400 for 30 minutes but next time leave the sausage until the last 15 minutes. Was a bit overcooked.

This was delicious and a hit with the whole family! The vegetables caramelized beautifully while roasting, and the sausage added great flavor. I used two bell peppers instead of one. I skipped lining the cookie sheet with aluminum foil – too wasteful, in my opinion, and scrubbing a cookie sheet really isn’t a big deal.
