Ingredients
- 2 teaspoons chopped fresh ginger
- 3 cloves garlic, chopped
- 1 teaspoon red curry paste
- 1 (15 ounce) can coconut milk, divided
- 1 (16 ounce) package chicken-style seitan, cut into strips or cubes
- 3 tablespoons smooth peanut butter
- 3 tablespoons white sugar
- 1 tablespoon vegetable oil
- 1 teaspoon tamari or soy sauce
- ½ teaspoon chili garlic sauce
- ½ teaspoon vegetarian oyster sauce
- ½ sweet onion, chopped
- 1 bunch fresh spinach, chopped
- 4 green onions, chopped
Instructions
- Combine the ginger, garlic, and curry paste in small bowl. Slowly pour in 1/4 cup coconut milk; stirring until the mixture is smooth. Gently stir in the seitan, coating the seitan with the marinade. Refrigerate for 30 minutes to 1 hour. The longer you let it soak, the more flavorful the seitan will taste!
- Stir together the remaining coconut milk, peanut butter, sugar, vegetable oil, tamari, chili garlic sauce, and oyster sauce in a medium bowl. Don’t worry if it’s not completely blended: when you cook it, the various substances will meld wonderfully. Set sauce aside.
- Lightly coat a large skillet with cooking spray; add the chopped onion; cook over high heat for 3 to 4 minutes, or until the onion is tender. Stir in the seitan, and cook until the seitan is heated through, about 7 minutes. Pour in the sauce, and stir to combine. Mix in the spinach and green onions; cook 3 minutes, or until the sauce has thickened and the spinach is cooked.

This was delicious served over rice, but I found it a little bit too sweet. Next time I will reduce the sugar a bit and add some chili flakes.
I made two batches of this, one with seitan and one with chicken. Everyone agreed they were both delicious. Will definitely be making this again.
Used crunchy peanut butter and mixed all the ingredients in no particular order. Also mixed with extremely thin Vietnamese pasta. Oh, and one last thing… I used a little less sugar. It came out AMAZING!!!
I wish I could give this 4.5 stars.. it was almost perfect for me. The only thing was it was a bit too sweet. An extra bit of hot chili sauce fixed it up though. I did make my own seitan as I was unable to find chicken flavored..not difficult and it freezes well. Will make this again for sure

This was simple to make and fast to put together especially using the pre-made seitan. I made the sauce per the recipe, except that I used agave syrup instead of sugar and used only half the amount called for since I think coconut milk is sweet enough as it is. It was pretty good as is but the only flavors I could really pick out were the peanut butter and coconut milk so I doubled the seasoning elements (red curry paste, chili sauce and oyster sauce) and that helped a lot. I wasn’t sure about the spinach but it added a nice color to the dish and blended in well with the other flavors. I served this over whole wheat spaghetti. Will make this again with my changes.

Made pretty much as stated only used real chicken. I liked it but my husband and kids didn’t. I couldn’t get a good answer out of them as to what they didn’t like about it, they just didn’t.

Good recipe. Additionally; however, seitan may easily be made using vital wheat gluten. Some commercially prepared brands include unnecessary fillers and flavors in their products. Making it yourself is very easy. It’s also much less expensive, and no doubt healthier.
