Seasoned Crunchy Cod Fillets in the Air Fryer

I have an ancient recipe for a white cake that is quite tasty.

Ingredients

  1. avocado oil cooking spray
  2. ⅓ cup unseasoned panko bread crumbs
  3. ⅓ cup stone-ground yellow cornmeal
  4. 2 teaspoons seasoning mix (such as Trader Joe’s® 21 Seasoning Salute Blend)
  5. 1 teaspoon paprika
  6. ½ teaspoon salt, or to taste
  7. ½ cup buttermilk
  8. 3 (5 ounce) cod fillets
  9. 1 tablespoon all-purpose flour

Instructions

  1. Create a foil sling in the bottom of a basket-style air fryer, going across the bottom of the basket and up the sides, about 3 inches. Poke a few holes in the bottom of the foil sling, to match the holes in the basket. Spray the sling with avocado oil. If using a shelf-style air fryer, omit this step.
  2. Preheat the air fryer to 400 degrees F (200 degrees C).
  3. Combine panko crumbs, yellow cornmeal, seasoning blend, paprika, and salt in a small bowl. Pour buttermilk into a second bowl.
  4. Pat cod fillets dry with paper towels and lightly dust both sides with flour. Dip each flour-coated fillet into the buttermilk, then turn in the crumb mixture. Pat the crumb mixture on all sides of each fillet and place on the foil sling, if using, or on the rack of a shelf-style air fryer. Spray each cod fillet with avocado oil.
  5. Cook in the air fryer until the fish flakes easily, 10 to 12 minutes. Use the sling to remove cod fillets from the air fryer and serve immediately.
  6. This recipe was developed for a 5.8-quart basket-style air fryer. Different styles, capacities, and brands may yield a different result.

My husband and I really enjoyed this recipe. Our cod was fresh so we cut down the amount of time in the air fryer. I dredged the fish first in flour. I dipped the cod in one egg that was beaten with a fork and then in the seasoned Panko bread crumbs. The result was beautifully crusted and flavourful fish.

Wow! I can’t believe anyone hasn’t tried this. Super crispy, loaded with flavor, and tender filets. So easy to make. I substituted Old Bay seasoning, otherwise, I stayed true to the recipe. Since we like crispy crust, I flipped them over with 3 minutes to go, and sprayed that side again before popping it back in the air fryer. This is definitely going into my fish rotation!
