Seared Salmon with 3 Bean Salad

Ingredients

  1. 1 (15-ounce) can navy beans, drained and rinsed
  2. 1 (15-ounce) can kidney beans, drained and rinsed
  3. 1 (15-ounce) can pinto beans, drained and rinsed
  4. 2 lemons, juiced
  5. 1 good bunch scallions, finely sliced
  6. 1 small bunch parsley, leaves finely chopped
  7. 1/3 cup extra-virgin olive oil
  8. Salt and freshly ground black pepper
  9. 4 (6 to 8-ounce) salmon fillets
  10. Ground cumin
  11. 2 tablespoons vegetable oil

Instructions

  1. Place all 3 kinds of beans in large mixing bowl and toss with remaining ingredients. Season, to taste, with salt and pepper. Set aside.
  2. Season salmon with cumin, salt and pepper. Heat oil in a large, nonstick skillet over medium heat. Place salmon skin side down in skillet and cook until skin is crisp and golden, about 3 to 4 minutes. Turn fillets over and cook until medium rare, about 3 more minutes.
  3. Serve salmon with salad.

evan the smell sends me into a asathma attack Iam always looking for new recieps the Lemmon juice and oil are perfect subsitution for the dressing as that is what I mainly use on salads i dont know why I didnot think of it for bean salad it is perfect thank you
