Sea Bass alla Fiorentina

Ingredients

  1. c4 (6-ounce) pieces sea bass
  2. 1/4 teaspoon salt, plus more for seasoning fish
  3. 1/2 teaspoon freshly ground black pepper, plus more for seasoning fish
  4. 2 cups all-purpose flour
  5. 3 tablespoons extra-virgin olive oil, plus 3 tablespoons
  6. 3 garlic cloves, chopped
  7. 1 (14-ounce) can crushed tomatoes
  8. 1/2 cup water
  9. 1 tablespoon chopped fresh parsley leaves
  10. 1 tablespoon chopped fresh basil leaves

Instructions

  1. Season both sides of the fish with salt and pepper. Put the flour in a shallow bowl, dredge the fish, tapping off the excess flour to create a light coating.
  2. In a medium nonstick fry pan, heat the 3 tablespoons olive oil over medium heat. Cook the fish until golden brown, about 3 minutes per side. Transfer fish to a plate.
  3. Wipe out the pan with a paper towel and heat the remaining 3 tablespoons olive oil over medium heat. Add the garlic, tomatoes, water, parsley, 1/4 teaspoon salt, and 1/2 teaspoon pepper and cook at a simmer for 10 minutes. Add the basil and the fish and heat for 2 minutes. Serve immediately.

It was amazing. I didn’t have chopped tomatoes so I substituted with 7 oz of tomato sauce.
I didn’t flour the fish, but I seasoned it according to the recipe and I followed the directions accordingly.
The fish was flaky and delicious. I definitely recommend it.

Quick and easy! Seasoned flour with parsley, onion and garlic powder. Used chicken broth instead of water in the sauce.
Served with couscous and roasted green beans.

Totally delicious! I only spritzed with avocado oil ,in non stick pan…3 minutes each side …did the sauce on the side and served with spaghetti squash!! I really don’t think you could ruin this fish!
