My mother used to make these scotcharoos when I was a child, and the whole family still enjoys them. They feature a crispy texture and a delicious blend of peanut butter, chocolate, and butterscotch.

Ingredients

  1. 1 tablespoon unsalted butter, or as needed
  2. 1 ½ cups peanut butter
  3. 1 cup light corn syrup
  4. 1 cup white sugar
  5. 6 cups crisp rice cereal
  6. ½ cup semisweet chocolate chips
  7. ½ cup butterscotch chips

Instructions

  1. Generously butter a 9×13-inch baking pan; set aside.
  2. Mix together peanut butter, corn syrup, and sugar in a large pot. Cook over medium heat, stirring until peanut butter melts. Bring mixture to a boil. Remove from the heat.
  3. Stir in rice cereal until well combined. Transfer mixture into the prepared pan. and pat it down with buttered hands.
  4. Melt chocolate chips and butterscotch chips in a medium saucepan over medium-low heat; stir until smooth. Spread over top of bars.
  5. Cool completely, about 20 minutes, before cutting into 24 squares.

Really appreciate this recipe to get me started making a scotcharoo’s, after using it I stopped by and candy bars, which is kind of cool! I’m experimenting with trying out different kinds of sugars and syrups to get different flavors and have added increased amounts of chips and different kinds of chips for the topping, enjoy, and have fun!!!

Amazing!! Recipe should say to put chocolate chips and butterscotch in a glass bowl above boiling water. You never want to put chocolate over direct heat. It will burn.

My daughter recently started making these and they turn out great! I’m not a big fan of butterscotch so we left it out and sprinkled heath bar pieces on top instead. Those having the issue that they are getting too hard are boiling the syrup too long and turning it into the hard crack candy stage. Just bring to a bubble and turn off. Keep stirring until sugar is dissolved…

Loved them, but I didn’t double the amount of chips as others have noted. Instead, I went slightly less at 3/4 cup of each. My friend asks for these for every birthday!

My mother also made these when I was a kid. My family loves them but my dad didn’t care for the butterscotch so Mother used all chocolate chips. I always spread the chocolate cups around on top and they melt enough to spread easily. Hint: do not let mixture come to a full boil. As soon as it starts to boil remove from the heat or they can become hard. when you spread these in the pan with buttered hands, be careful because they are hot.

Recipe is incorrect. I burnt 4 batches of chocolate / butter scotch before realizing every other recipe calls for 1.5 cups of each. This one says only .5 cups. Also not sure if it was my fault or not but the bottom layer was rock hard.

A few tips from a good ole Midwestern girl who has made these a 1000 times: (1) add a stick of butter to the sugar and corn syrup mixture and (2) pull the mixture from the heat as soon as it starts to bubble (avoid overcooking to prevent bars from getting too hard).

I found them to be really hard to chew and I followed the recipe precisely. My family loves anything made with peanut butter and chocolate, but they did not seem to like these at all. I will not be making these again!

AMAZING!!! There are two tips that MUST be followed, and other reviewers agreed: remove the sugar/corn syrup/peanut butter mixture from the stove right when boiling bubbles start AND double the topping! Will power to resist these does not exist.

Recipe needs some modifications to avoid overcooking the sugars. My bars turned out too chewy that you almost couldn’t cut them. I would also recommend using more chocolate.

These turned out very disappointing, super chewy and hard. You can barely cut them with a sharp knife. Hard to chew. Super thick. I was going to bring them to an event but now I have to make something else. I’ll probably throw most of them away. They taste good, if you can chew them without wearing out your jaw.

A family favorite! One whole 12 ounce box of rice crispies is perfect for making a double batch of these, which you will definitely want to do because they go fast!
