Ingredients

  1. 1 (15 ounce) can creamed corn
  2. 1 (15.25 ounce) can whole kernel corn
  3. 1 (8 ounce) container sour cream
  4. 2 eggs
  5. ½ cup butter, melted
  6. 2 tablespoons white sugar
  7. 1 (8.5 ounce) package corn muffin mix

Instructions

  1. Preheat the oven to 350 degrees F (175 degrees C). Grease a 9×13-inch baking dish.
  2. Mix creamed corn, whole kernel corn, sour cream, eggs, melted butter, and sugar together in a bowl. Mix in muffin mix, then pour into the prepared baking dish.
  3. Bake in the preheated oven for 35 to 40 minutes, or until a knife inserted in the center comes out clean.

This was a huge hit at Thanksgiving dinner tonight! I only made one 9×13 dish worth since there would be so much else to eat. With 3 men, 4 women and 2 kids the dish was scraped clean. A second dish would’ve been just fine because we couldn’t get enough. I followed the recipe, but omitted the white sugar because I bought honey corn muffin mix (Jiffy). I also sprinkled parsley on the top before baking for 40 minutes. It came out nice and moist and evenly cooked even having drained the water from the whole kernel corn.

This recipe is THE BOMB. No alterations needed! I will forever make this instead of cornbread; it’s just sweet & rich enough without being too much, and the texture is perfect. I saw other reviewers asking about draining the creamed corn: DON’T. The result in flavor, consistency & texture would be compromised. Made this for Thanksgiving last year and everyone wanted the recipe. Delicious as is!

I really loved this. I didn’t have enough sour cream so I had to substitute some ricotta and it turned out fine. It was actually a perfect replacement for any type of side bread on Thanksgiving. I was thinking it’d be more soupy but it was firm and easily cut into squares. Takes on the taste of whatever mix you use.

I modified this recipe. I used three cups fresh sweet corn that I put thru my food processor and added one half cup of Martha White corn meal mix, I also added one half cup of roasted chopped Hatch chili’s . bake as directed. I thought the results were excellent.

This was great. Are used a can of corn with red and green peppers, drained along with the cans of creamed corn. I melted the butter and left it in the microwave by accident I never added that, and it still turned out moist and buttery flavored.
