Savoy, Lime and Cilantro Coleslaw

Ingredients

  1. 1 head Savoy cabbage
  2. 4 scallions
  3. 1/2 bunch fresh cilantro, torn
  4. 1/2 cup sour cream
  5. 1/2 cup mayonnaise
  6. 1 1/2 tablespoons sugar
  7. 2 limes
  8. Kosher salt and freshly ground pepper

Instructions

  1. Shave the cabbage with a sharp knife or mandoline so you have thin ribbons. Cut the scallions long and on the bias so you have pieces similar in shape to the cabbage. Toss the cabbage, scallions and cilantro in a large salad bowl.
  2. Make the dressing by combining the sour cream, mayonnaise, sugar and the zest of the limes in a medium bowl. Season with salt and pepper and finish with a squeeze of lime juice. Pour the dressing over the cabbage mixture and toss to combine.

I made this for dinner with tacos, and it was a big hit! I’m not usually a fan of coleslaw, but this was nice with the Savoy cabbage.

Used greek yogurt (3.5% whole milkfat) in place of sour cream and it was wonderful. A great use for the beautiful Savoy Cabbage I picked up at the farm market this morning. Added a minced poblano for a bit more southwest flavor. This recipe is simply fantastic; perfect to share by taking it to an outdoor/backyard BBQ or picnic.

Made this slaw it turned out fabulous!  I tweaked it to my family who like spice, cilantro, & lime so I added much more of these. Also, cut some pickled jalapenos & tossed!  Refrigerated for 1hr. before serving with beef brisket.

Excellent! Easy to make, light and refreshing.  I halved the recipe because I had a very small head of Savoy Cabbage.  I used the entire zest and juice of one average sized lime.  Made the dressing and let it sit in the fridge for about 30 minutes so I could taste test and adjust if necessary before adding to the cabbage mixture.  Served along side of Sunny Anderson’s Easy BBQ Short Ribs.
