In all seriousness, my friends and family now view me as more of a “chefworthy” person thanks to this homemade pesto recipe. My husband claims that I could make millions just from this dish. Though this easy pesto recipe may trick the best of them, I’m still only a wannabe cook. It is so amazing because of how straightforward it is and how high-quality the components are.

Ingredients

  1. 1 tablespoon olive oil
  2. 2 medium yellow squash, sliced
  3. 2 medium zucchini, sliced
  4. ½ (16 ounce) package baby-cut carrots
  5. 1 medium red onion, cut in half and thickly sliced
  6. 2 packets Swanson® Flavor Boost™ Concentrated Vegetable Broth

Instructions

  1. Heat the oil in a 12-inch skillet over medium-high heat. Add the yellow squash, zucchini, carrots and onion and stir-fry until the vegetables are tender-crisp.
  2. Stir the concentrated broth in the skillet and cook until the mixture is hot.
  3. Cooking Basics: True “baby” carrots are a seasonal vegetable available in spring and early summer and are sold in bunches with the green tops left on. They can usually be found in upscale grocery stores or farmers’ markets. “Baby-cut” carrots are mature carrots that have been peeled and cut into small carrot-shaped pieces. They are widely available year round in the produce section of most grocery stores.

I make this yummy recipe including chopped Bok Choy..the more veggies the better, I say! Since members of my family have wheat sensitivity, I use Tamari sauce, less sodium also, instead of soy sauce. Tamari is also deeper in color & more intense flavor. I serve it with rice ie… brown Basmati, Jasmine, or by itself…delish any way served.

Oh my, this was fabulous!! I took some advice from someone who said to add broccoli, and some colorful bell peppers, and mushrooms. I also put a bunch of shakes of soy sauce, about 1/2 cup or less of liquid vegetable broth, and a whole bunch of siracha sauce and WOW!! This DEFINITELY goes into the rotation, at least for me when I don’t have my kids!!

I have a garden that that I always have extra veggies to use. Added green beans, red onion and zucchini fresh from the garden. Had pre cooked chicken that I added with the broth. Served with brown rice. Excellent.

This made a Delicious side dish for myself tonight at dinner! This is a super Base recipe! you can add all kinds of veggies!!I did add some Bell Pepper and fresh Garlic and about a tsp of italian seasoning!

Easy and delicious! You can use any combination of veggies to customize it. I used the Swanson chicken broth flavor packets and it was awesome and added a little minced garlic. Will make again!

I’ve been making this for quite awhile now & my family loves it. I make Angle Hair Pasta & serve this over it. It is so yummy!! Sometimes I will stir fry cubed boneless cubed chicken breast first before the veggies. You could serve it with shrimp too. YuMM!! My Grandkids have requested this from me. Enjoy!!

I have been cooking this combination of vegetables for years but have always used a version of Italian Dressing to cook the vegetables in such as Newman’s Own Italian or Kraft Zesty Italian instead of the Flavor Boost packet. Also in season, I would often add fresh cut up beefstake tomato’s. It is a great side dish or as others have said, can also be eaten over rice as a very full meal. I will make it again and try the Flavor Boost method too!!

Add in some broccoli, mushrooms, and a pepper (red/yellow/orange) or two, and replace the Swanson’s with House of Tsang Stir-Fry sauce (or Szechuan if you like it on the spicier side as I do) and you will be eating my go-to at-home date meal. Goes great on some brown rice.

My husband and I both like this dish; cruncy veggies, nice flavor, and easy too. We added pepper to taste.
