Savory Summer Squash with Bacon

Although I adore squash, I was looking for a new recipe with fewer calories. I looked up pasta recipes after searching for tasty ingredients. So I reasoned, why not swap spaghetti for yellow squash? And it succeeded! The ingredients can all be prepared ahead of time and stored in the refrigerator until cooking time. The nicest texture comes from immature squash that is long and lean.

Ingredients

  1. 3 slices bacon, cut into 1/2-inch pieces
  2. 1 tablespoon olive oil
  3. 1 clove garlic, minced
  4. 1 sweet onion, chopped
  5. 2 pounds yellow squash, cut into bite-size pieces
  6. 4 pickled artichoke hearts, chopped
  7. 2 tablespoons capers with liquid, or more to taste
  8. ½ teaspoon crushed fresh rosemary leaves
  9. salt to taste
  10. ground white pepper to taste

Instructions

  1. Place 2 paper towels on a microwave-safe plate; add bacon and top with another paper towel. Cook in microwave on high until some grease is absorbed, about 30 seconds.
  2. Transfer bacon to a deep skillet and cook over medium-high heat, stirring often, until crisp, 5 to 10 minutes. Lower heat to medium; stir garlic into bacon and cook until fragrant, about 30 seconds. Add onion; cook and stir until onion is slightly translucent and still firm, about 5 minutes.
  3. Mix squash into onion-bacon mixture; cook and stir until squash is slightly softened, about 5 minutes. Add artichoke hearts; cook until heated through, 2 to 3 minutes. Add capers and rosemary; cover skillet and cook, stirring often, until squash is softened but firm to the bite, about 5 more minutes. Season with salt and white pepper.

I needed a squash recipe without cheese or a lot of fat. This was great. I didn’t have artichokes so I added 2 chopped Roma Tomatoes. I put too much white pepper, don’t do that!

Big hit at our house! I try not to change recipes the first time I make them, but I didn’t have artichoke hearts or bacon. I used deli ham, and replaced the artichokes with green beans. Whoever suggested parmesan, thank you! Really good!

I like squash a lot. We have it typically twice a week as a side dish. There were far too many flavors going on here.

Everyone loved it on the 4th of July. I only dotted the top with the capers. Added quartered cherry tomatoes all over the top to add color. One person commented the tomatoes added to the flavor. Good job!

I had pancetta so i used that instead of bacon. It was delicious. I felt the cooking times were a little off as the squash got pretty squishy after cooking even for a minute. I did put parm on the top and put under the broiler for a few minutes. It was delicious as is. Next time I would reduce the cook time and probably not cover it, instead finish it under the broiler. Still an excellent recipe!

I substituted Pancetta (chopped) for the bacon and shredded the squash. It was excellent. I use this as a pseudo hash with an egg on top as a breakfast dish. I definitely make it again.

I made this to recipe except for reserving some of the bacon pieces for the top along with some freshly shredded Parmesan which I thought added not only to the presentation but to the flavor. This recipe was a little different take on the ordinary yellow squash and enjoyed it for a change. Thanks Katrinika for submitting this!

I spiral cut the squash instead of cutting into bite-size pieces but, otherwise, followed the recipe. Just a really nice side dish loaded with fresh flavors. Delish!
