Savory Beef Stir-Fry

Ingredients

  1. 1 beef bouillon cube
  2. ⅓ cup boiling water
  3. 5 tablespoons low-sodium soy sauce
  4. 2 tablespoons cornstarch
  5. 1 tablespoon teriyaki sauce
  6. 2 teaspoons white sugar
  7. 1 pound beef round steak, cut into thin strips
  8. 1 tablespoon olive oil
  9. 1 (16 ounce) package frozen stir-fry vegetables
  10. 1 (4 ounce) can sliced water chestnuts, undrained

Instructions

  1. Dissolve beef bouillon cube in boiling water in a large bowl. Stir soy sauce, cornstarch, teriyaki sauce, and sugar into the water. Lay beef strips into the soy sauce mixture; stir to coat beef entirely.
  2. Heat oil in a large skillet over medium-high heat. Cook and stir vegetables in hot oil briefly, about 1 minute. Stir water chestnuts into the vegetable mixture, place a cover over the skillet, and cook at a simmer until the vegetables are hot, about 5 minutes. Remove vegetable mixture with a slotted spoon to a large bowl, reserving juices in the skillet.
  3. Pour beef with soy sauce marinade into the hot skillet; cook and stir until browned completely, about 5 minutes. Return vegetable mixture to the skillet; bring to a simmer. Cook and stir until completely hot, about 2 minutes.

First off, thank you for sharing your recipe. This was delicious and easy, easy, easy to make. I used a frozen broccoli stir fry blend and tossed in some pea pods near the end (wanted to keep them crunchy). Since the blend had water chestnuts I didn’t add extra. I used Thai style rice noodles that I added at the end. If you use thin rice noodles be sure break them up when adding to the pot so they mix nicely and don’t clump together.

I did change it a bit. I used 2 tablespoons of teriyaki sauce and 4 tablespoons of soy sauce. I wanted it a little sweeter. Turned out great. My husband went back for seconds. We paired it with ramen noodles instead of rice. I think next time I will let the meat marinade in it for a few hours before cooking it.

1st time: I used filet mignon. So tender! Delicious! 2nd time: I substituted shrimp for the beef. Also added fresh squash and zucchini. Used chicken broth in place of the water and bouillon cube. Cooked shrimp about 2 minutes or until pink. Served over fried rice. Awesome!

This was good, not very spicy but flavorful. Instead of frozen veggies, I used a yellow onion, a medium zucchini, a poblanos pepper and a red pepper – all julienned. I did add the water chestnuts, too. I doubled the marinade.
