I came up with this when I was unsure of what to do with some Swiss chard. I included everything I had in the fridge. Voila! White wine was then added. Yummy. Other vegetables or seasoning that you have on hand can also be used.

Ingredients
- 3 tablespoons olive oil
- 1 cup sliced fresh mushrooms
- ½ onion, finely chopped
- 3 cloves garlic, minced
- 1 bunch Swiss chard, chopped
- ½ roasted red pepper, chopped
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- salt and ground black pepper to taste
- ½ cup white wine
Instructions
- Heat olive oil in a large skillet over medium heat. Add mushrooms, onion, and garlic; cook and stir until onion is translucent and mushrooms soften, about 5 minutes. Stir in Swiss chard, red pepper, oregano, basil, salt, and black pepper. Cook until Swiss chard is wilted, about 3 minutes. Stir in white wine; cook until Swiss chard is tender, 3 to 4 minutes more.

This was a delicious recipe. Another commenter mentioned feta cheese that he didn’t like, but I didn’t see that suggestion in the recipe. I also thought feta would be too strong on this delicate, tasty dish. I did add some freshly grated parmesan on top, and we thought it was a nice touch. Clean plates!
All the ingredients were nice, but for some reason it tasted a little strange. Swiss Chard is a tricky vegetable.
The whole family enjoyed this recipe! I will definitely prepare it again in the future.

Tasty! I am not a feta fan so just omitted the cheese, but very good. I only used the leaves of the chard, not the stalks. Will make again.
We liked this very much! Maybe a little too much onion (but my onion was big), but very tasty & quite pretty!
