Sauteed Mushrooms and Scallops

feta cheese, basil, and garlic mayonnaise on a French roll with roasted eggplant. Adapted from a cafe at the University of California, Irvine, this was my all-time favorite sandwich.

Ingredients

  1. 2 tablespoons butter
  2. 1 (10 ounce) can sliced mushrooms, drained
  3. ¼ teaspoon ground cumin
  4. ⅛ teaspoon ground black pepper
  5. 1 small onion, finely chopped
  6. 2 cloves garlic, minced
  7. 9 ounces bay scallops

Instructions

  1. Melt butter in a medium pan over medium heat. Add mushrooms, cumin, and pepper. Saute until mushrooms are lightly browned, about 5 minutes.
  2. Add onion and garlic; saute until translucent, about 5 minutes. Add scallops; cook and stir until opaque, about 3 minutes. Remove from heat.

Delicious recipe. We added chopped red pepper and bacon.

Added a little lemon zest and lemon juice and served over angel hair pasta. Like Deb, I added extra cumin. Sprinkled with parmesan cheese when it was plated. Delicious!!!

This recipe is simple and delicious. I used half the butter, replaced the other half with olive oil and added extra garlic. Will be making this again

This was a great dish. Easy to make with the frozen bay scallops we had. When I made it I added some broccoli to it for a bit of color and a vegetable. We will make it again for sure.

This is delicious, I left out the onions and it still tastes terrific, I added a sprinkle of thyme when I put it on my plate. I’ll definitely be doing this again

I used fresh mushrooms,, just cooked the mushrooms and onion together with the cumin and pepper, then added the minced garlic, and cooked for about a minute, next added the scallops, which I had quartered as they were large sea scallops and cooked for a few minutes. squeezed fresh lemon juice over all , and perfect!

Delicious & easy to make. I added extra cumin & garlic. Also used olive oil & just a small amount of butter for flavor. Added a couple pieces of bacon-crumbled-& served over angel hair pasta.
