Sauteed Green Beans with Creamy Lemon Dressing

Ingredients

  1. 2 tablespoons olive oil
  2. 2 shallots, chopped
  3. 2 pounds green beans, trimmed, cut into 1 1/2-inch pieces
  4. Kosher salt and ground black pepper
  5. 1 cup heavy cream
  6. 6 sprigs fresh thyme, leaves only
  7. 1/2 lemon, zested and juiced
  8. 1 cup chicken broth
  9. 2 tablespoons sour cream

Instructions

  1. Heat the olive oil in a large skillet over medium heat. Add the shallots and cook, stirring, until softened, about 1 minute. Add the green beans and salt and pepper to taste. Saute, stirring occasionally, until crisp tender, about 5 minutes. Transfer to a serving dish and set aside.
  2. Return the skillet to medium-high heat and add the cream, thyme, lemon juice and zest, and chicken broth. Bring to a simmer and let reduce by half, until thick enough to coat the back of a spoon, about 5 minutes. Remove from the heat and stir in the sour cream. Add salt and pepper to taste.
  3. Pour the dressing over the green beans to serve.

I only added 3/4 C. of the chicken broth because I wanted the sauce to be a bit thicker. Also, I forgot to add the sour cream because I was busy cooking a lot of dishes at the same time but it was still delicious. I will definitely make this again and again! It was a BIG hit with the family.

I am giving this a 5, because all of the components were yummy !!  I did not care for the sauce over green beans, yet loved it over the pork I served it with.  My husband loved it as written.  I would have thickened it a bit more, but that is me.  Flavors rocked, just watch the timing.  I hate when someone rates a recipe a 2 because it has bleu cheese and they don’t like bleu cheese ( then why did you use bleu cheese ????????????????????).   Play this on your tastes and it rocks !!!
