I was inspired to add peppers to a recipe after seeing how simple it is to produce many pepper varieties in my backyard. I came up with something resembling jambalaya or arroz con pollo but with a bit extra spice.

Ingredients
- 6 slices lower-sodium bacon
- ½ large white onion, diced
- 30 Brussels sprouts, halved lengthwise
- 2 cloves garlic, chopped
- salt and ground black pepper to taste
- 2 tablespoons grated Parmesan cheese, or to taste (Optional)
Instructions
- Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain the bacon slices on paper towels, retaining grease in the skillet. Crumble bacon.
- Cook and stir onion in bacon grease over medium heat until translucent, about 5 minutes. Add Brussels sprouts; cook and stir until Brussels sprouts are lightly browned, about 5 minutes. Season with salt and pepper.
- Sprinkle bacon over Brussels sprouts mixture and stir. Remove skillet from heat, transfer Brussels sprouts mixture to a serving bowl, and sprinkle with Parmesan cheese.
- Using fresh Brussels sprouts is preferred, but if not readily available, frozen Brussels sprouts may be used instead. If using frozen Brussels sprouts, you may have to drain any excess liquid that is rendered while cooking the sprouts.

Yummy. Only difference is it used the air fryer to roast Brussel sprouts. Once sprouts were cooked topped them with onion/bacon.
So simple, yet so tasty. I made this to go with an Asian dish. I used frozen whole and cut the bacon down to meet the number of sprouts. I never cut down on onion and garlic no matter what. I didn’t use the cheese only because I had a sauce that I made for the fried dumplings. I love Brussel sprouts; they are underrated and overlooked green veg.
Delicious! Next time I will steam the sprouts for 3-4 minutes before sautéing. We like our veggies al dente, but these were just too tough to thoroughly enjoy. Otherwise a great recipe!

Delicious! I steamed the Brussel Sprouts first because my family does not like hard cooked veggies. They were devoured completely before the meatloaf and mashed potatoes. Will definitely make these weekly since even the smallest children licked their plates clean. The only complaints I heard were “cook more Mom the next time”!!!
I did add the garlic to the onion during the saute part. I think that was what was left out of the directions. I find Brussel sprouts bitter but you have to have the bacon and onion with each sprout to really get the full effect.

Everybody loved them ! I just sprinkled a bit of the balsamic and no Parmesan cheese only because I forgot ,next time I’ll add the cheese .

This is delicious.. It’s also super easy.. I received 3 stalks of fresh Brussels sprouts & had no idea how I was going to cook them for Thanksgiving. We had bacon and the onions were already out, threw this together & everyone loved it. The one thing that had no leftovers.

A group of my friends planned a grownup girls PJ party. We intended to introduce one of the ladies to a variety of veggie dishes, in hopes of encouraging her to take pleasure in eating them. It was kind of a veggie eating intervention. Each of us brought a veggie dish. I had been wanting to try a Brussels sprout recipe I had, but when the time came, I couldn’t find it. Great recipe! Disappeared quickly from the dinner table. It took a bit longer for me to get the brussel sprouts to brown then the recipe said but otherwise I kept everything the same.
Always a favorite in my house. Here are my changes, my sprouts were so big, I quartered them, I sliced the bacon prior to cooking it and sautéed it with the onion. When it was 3/4 of the way done, I added the brussel sprouts, covered and let it all cook till done. So good, served it with Becca’s Accidental Fish and steamed white rice.
Can’t go wrong with Brussels sprouts, bacon and garlic and as this recipe’s first reviewer I’m happy to report that experienced and novice cooks alike can prepare this with confidence as the submitter has the preparation down pat. (Forgot to sprinkle these with the Parmesan. Too bad, I really would have liked that!)
