Ingredients

  1. ¾ pound ground pork sausage
  2. 1 tablespoon butter
  3. 4 green onions, chopped
  4. ½ pound fresh mushrooms, sliced
  5. 10 eggs, beaten
  6. 1 (16 ounce) container low-fat cottage cheese
  7. 1 pound Monterey Jack cheese, shredded
  8. 2 (4 ounce) cans diced green chile peppers, drained
  9. 1 cup all-purpose flour
  10. 1 teaspoon baking powder
  11. ½ teaspoon salt
  12. ⅓ cup butter, melted

Instructions

  1. Place sausage in a large, deep skillet. Cook over medium-high heat until evenly brown. Drain, and set aside. Melt butter in skillet, and cook and stir the green onions and mushrooms until tender.
  2. In a large bowl, mix the eggs, cottage cheese, Monterey Jack cheese, and chiles. Stir in the sausage, green onions, and mushrooms. Cover, and refrigerate overnight.
  3. Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9×13 inch baking dish.
  4. In a bowl, sift together the flour, baking powder, and salt. Blend in the melted butter. Stir the flour mixture into the egg mixture. Pour into the prepared baking dish.
  5. Bake 40 to 50 minutes in the preheated oven, or until lightly brown. Let stand 10 minutes before serving.

A unanimous hit with our extended family. Made exactly as written except instead of flour, buzzed some rolled oats in the Vita-Mix blender to make oat flour. Did melt the butter for the roux in a microwave, then crumbled the flour/butter/baking powder mixture onto the egg mixture, then mixed with a pastry cutter first to be sure it was well incorporated and not in clumps. Made the night before as directed, then added the roux the next morning. Had salsa on hand in case it was bland but no need. Used 1# of Jimmy Dean original sausage. YUM!

Excellent! The only change I made was to add a little chicken broth (could use milk or water) to the flour mixture to make it easier to mix in the casserole….I also didnt have enough MJ cheese, so added cheddar…This is a real nice change up to regular bland breakfast casseroles!

My husband have made this casserole for years at our bed and breakfast in New Mexico, but without the sausage. We also serve it as finger food made in mini muffin pans lined with pie dough. There are countless ways to vary the recipe and it freezes well.

I made this just about as written. (I hate it when people give a recipe 5 stars. Then go on and on about everything they did differently. Once you change one thing, it is no longer that recipe, and you are deceiving people with your 5 star rating. Drives me nuts.) It is good as written. Everyone liked it. But my wife and I both said it needs something more to it. Next time we will add peppers. And maybe some tomatoes. And some more spices. It is good as written. but I think it could be a wow with a few additions.

Great recipe! I have never used cottage cheese, flour and baking soda in an egg dish before but it turned out great. The eggs were light and fluffy. I added a couple of things… I added a layer of sliced potatoes at the bottom of the dish (canned) and I added some diced bell pepper in addition to what the recipe called for. I would definitely make this again.

For a Keto friendly / Gluten free version, skip the flour and baking powder and substitute a cup of Keto pancake/waffle mix. I reduced the salt to about 1/4 teaspoon. Increased cooking time to an hour (could take less if you use a larger pan but the 9×13 was quite dense and required more baking time). We topped ours with Salsa. Great option for a savory breakfast!

Like many reviews suggest the recipe as-is is underseasoned. Add a bit more salt (I added to onions while saute-ing) and pepper (I added when combining the shredded cheese with eggs). Solid template to build from to your own tastes.

This was delicious! I cut the egg portion in half, using 6 eggs. But the roux portion I kept the same. I forgot to buy diced chilies, so instead used a can of Rotel and that worked great! We enjoyed the flavors very much!

Made this several times. I have used bacon, pork sausage, turkey sausage, but the best, in my opinion, is Chicken Apple sausage. Quartered and sauteed, I think it is the best of all. I have use various kinds of veggies, mushrooms, broccoli, onion, green onion, asparagus, it all works. I prefer to use TJs Swiss, and Gruyere, cheese mix. In my opinion you can almost never have too much cheese. Make it your own. The recipe is very forgiving. I have also made this as a Zero points WW option. It all works.

I almost followed the recipe. used a pound of sausage and 13 eggs. Also went with 3/4 cups of Bisquick instead of the milk, soda and flour. It was great and pretty too
