Ingredients

  1. 1 pound sage flavored breakfast sausage
  2. 3 cups shredded potatoes, drained and pressed
  3. ¼ cup butter, melted
  4. 1 (16 ounce) container small curd cottage cheese
  5. 12 ounces mild Cheddar cheese, shredded
  6. ½ cup onion, shredded
  7. 6 jumbo eggs

Instructions

  1. Preheat the oven to 375 degrees F (190 degrees C). Lightly grease a 9×13-inch baking dish.
  2. Heat a large, deep skillet over medium-high heat. Cook sausage in the hot skillet until evenly browned and crumbly, 5 to 7 minutes. Drain and discard grease.
  3. Stir together shredded potatoes and butter in the prepared baking dish; lightly press mixture into the bottom and sides of the dish. Mix together sausage, cottage cheese, Cheddar cheese, onion, and eggs in a bowl. Pour over potato mixture.
  4. Bake in the preheated oven until a toothpick inserted into the center of casserole comes out clean, about 1 hour. Let cool for 5 minutes before serving.

delicous, made today for sunday brunch. followed recipe except left cottage cheese out, baked for 1 hour. cooked onions with sausage. layerd hashbrown potatoes,added 1 can of cheddar cheese sauce over shredded hashbrowns. then mixture, came out perfect! great recipe.

Our grown children and their spouses come over for breakfast on Christmas morning, and I’ve tried probably a 1/2 dozen different breakfast casseroles. Most of them tend to be a little dry and really just not that great. But this one is different. I followed recommendations of other reviewers and used frozen potatoes, mixed some of those with melted butter, and pressed that into the bottom of the pan. Baked that crust until it was brown. Followed the rest of the recipe as written, except covered the top with additional cheddar before baking. The entire family loves this recipe! We stopped trying any others, and have had this one for maybe the last 5-6 years. It’s definitely the best!

I made this for Sunday morning breakfast and everyone loved it. I used 4 cups of shredded potatoes instead of three. I also used cubanelle and green peppers and ricotta instead of cottage. It came out creamy and not dry. Everyone had seconds and they can’t wait until I make it again. Love this recipe.

I’ve made this recipe dozens of times over the years. In my family, we call it “The Crowd Pleaser”! I always cook the onions with the sausage, and sometimes I sub out half the cottage cheese for (not quite all of) a can of cream of onion soup. Delicious, no matter how you make it!

Because there are just two of us I cut the recipe in half and used a 8×8 Pyrex dish which I sprayed first. I used hot Jimmy Dean sausage and added some diced red bell pepper and white onion cooked along with the sausage. I used fresh grated sharp cheddar cheese and Daisy 4% cottage cheese. I had a package of Simply Potatoe hash browns that I used with the melted butter in the bottom of the dish pressed down. I also added a small can of Ortega mild chilies. Three normal size eggs and only cooked the smaller size for 45 minutes. I served it with a cup of fresh chopped fruit and homemade banana nut bread. This would be good for either dinner or breakfast and I will definitely make it again.

This is a delicious recipe as-is, but I love how versatile this recipe is. We have chickens and often have more eggs than we know what to do with, and it is an easy way to use lots of eggs quickly. I usually double the number of eggs. It makes it go farther. I use the cubed hash browns sometimes, and I almost always add more hash browns, because there aren’t enough to go up the sides of my casserole dish at 3 cups. I’ll do 4-5 cups and just pour the butter over them in the casserole dish. I didn’t have enough cottage cheese today and did half cottage cheese and half sour cream. That actually worked really well. You can add mushrooms, diced green chiles or rotel, spicy cheeses, etc. to give it a different type of deliciousness. If you double the eggs, just add a bit more of everything else… doesn’t need to be precise measurements, but if you like precise measurements, just 1.5 everything else. Great recipe!

I made this pretty much as written, but I did add a few items because I wanted to use them up. I added some frozen chopped spinach, I used the real potatoes as written, and I added some poblano pepper. I did also salt the potatoes and salt and pepper the egg mixture. Delicious! This will be my work breakfast for the next week.

I made this for a “breakfast for dinner” concept. It was a hit! Will definitely make again with a few alterations to our preferences. I did use 8 eggs instead of 6 as mentioned. I also used frozen hashbrowns, because why not! We did not prebake. We cooked onion with the sausage (white onion with ground sausage). Used probably closer to 16oz of mixed cheeses for a little zing. It turned out wonderful. Next time we will add more sausage as I think it needs another 1/2lb and it could be a bit creamier. Maybe more cottage cheese or sour cream?

This was a winner Christmas morning breakfast! I used a bag of hash browns, dusted that with garlic powder, used 7 eggs, and added salt and pepper to the mixture. I think next time I’ll try ground sausage instead of links. So easy to put together and everyone loved it.

This casserole turned out great! I read the other reviews and made some suggested changes. I used 8 eggs instead of 6, 3/4 cup of onion which I cooked along with the sausage. My sausage came from a butcher and didn’t list all the spices so I added 2 cloves of garlic, sprinkled some sage powder and salt while cooking. I think I ended up shredding closer to 14 oz of mild cheddar cheese, but since when to people complain of too much cheese? I know I don’t.

Could find my mother-in-law’s recipe, so decided to try this one that looked really similar. Amazing!!! Made a couple changes..can’t stand cottage cheese, so sub’d cream of chicken soup (was thinking like a cheesy potato egg bake), which added awesome flavor!! Also sautéed leeks with the turkey sausage, and added some red pepper flakes to give it a little kick. We were so happy with how it turned out, felt like even a little more flavorful than my MIL’s (sorry Denise)! 🙂
