We really liked the weeknight family meal I pulled together with this simple simmered chicken recipe. fantastic with rice. Also available as shreds with tortillas.

Ingredients
- 6 skinless, boneless chicken breast halves
- salt and ground black pepper to taste
- 2 tablespoons olive oil
- 1 (15 ounce) jar mild picante salsa
- 1 (14 ounce) can chicken broth
Instructions
- Season chicken breasts all over with salt and black pepper.
- Heat oil in a large skillet over medium-high heat. Cook chicken breasts in hot oil until browned, 4 to 6 minutes per side. Pour salsa and chicken broth over chicken. Bring mixture to a boil, reduce heat to medium-low and simmer 3 to 5 minutes. Turn chicken over, stir salsa mixture, and continue to simmer until chicken is tender and sauce is slightly thickened, 3 to 5 minutes more. An instant-read thermometer inserted into center of chicken should read at least 165 degrees F (74 degrees C).

A very simple and quick recipe for hectic weeknights. The flavor was pretty good, assuming you use a good quality picante sauce. You could use regular salsa too. I had pounded my chicken breasts to an even 1″ thickness for more even cooking. Cook time will vary depending on the thickness of your chicken. I actually enjoyed the leftovers more the next day, as the flavors had time to develop.
Soooooo good! Over a 1/2 cup of brown rice and topped with an oz of shredded pepper jack cheese! Delicious! Thank you!
I made this just as written, but , when chicken was done, I put a slice of Monterey Jack cheese on each breast, and covered for a minute, or until cheese is melted. I serve it over rice, with a dollop of sour cream. We loved it!

It was super easy to make! I added lettuce, sour cream and black beans to the plate! Delish! Will make again! (Would have had rice but that is a food item not available in my area at this time.)

It was awesome! I was expecting it would taste good when I read the recipe, but the actual flavor exceeded expectations. While it takes close to an hour to make, it is an easy meal to put together. Highly recommended!
