Ingredients
- 1 tablespoon kosher salt
- 1 ½ pounds salmon fillets
- 1 teaspoon chopped fresh thyme
- 1 teaspoon dried oregano
- 1 teaspoon chopped fresh basil leaves
- 2 teaspoons dried dill weed
- ½ cup Dijon mustard
- 1 ½ cups mayonnaise
- ¾ cup crumbled feta cheese
- 1 cup frozen chopped spinach, thawed and drained
- 1 (17.5 ounce) package frozen puff pastry, thawed
- 1 egg white, beaten
Instructions
- Preheat an oven to 375 degrees F (190 degrees C).
- Sprinkle salt on both sides of the salmon. Mix the thyme, oregano, basil, dill, mustard, and mayonnaise in a small bowl and spread over the salmon, then sprinkle the feta cheese on top. Layer the spinach over the feta cheese.
- Roll the pastry out wide enough and long enough to wrap around the salmon, about 1/4 inch thickness. Place the salmon in the center of the pastry and fold the pastry over the salmon. Place the roll seam-side down on a baking sheet. Cut several small slits in the pastry to allow steam to escape. Brush the egg white onto the pastry.
- Bake in the preheated oven until the pastry is golden brown and the salmon flakes easily with a fork, about 45 minutes.

Absolutely loved it, the combination of salmon feta spinach and the mustard / mayonnaise sauce was an absolute hit. My wife praised it and normally she does find something to change in the recipe (which is always appreciated when she does seeing she’s the cooking masterchef) but nothing to amend with how I did it, so thats the biggest praise one can get
I was looking for a recipe with salmon that I would enjoy considering salmon is not my favorite. This is the secret! I love this recipe! And I put the leftovers in the air fryer to crisp the crust back up.

Great recipe! Easy to make and delicious. I couldn’t find thyme and my guests don’t like dill, so I was missing those ingredients, but still an excellent dish.

Good recipe for the novice home cook. Way overseasoned. There is feta, which is strong, topped off with so many herbs which don’t make sense…season to taste preferences! Less is more, and pick herbs that at least compliment each other. Wellington is elegant, not supposed to be overwhelming.

This was very tasty. I don’t usually put cheese with fish so I was a bit reluctant to try this recipe. It was fine but probably something I will omit the next time I make it. The mayo/mustard combination was good but I cut it in half as per other reviewers, less seemed to be the right amount.

My focus was Beef Wellington but because my husband does not eat red meat I added this recipe to the menu. It was MAGNIFICENT!!! The spices were perfect. A wonderful recipe.

Used fresh dill! And put a lot more than they ask for!
So yummy. After reading reviews I used fresh spinach. I also used cream cheese instead of feta and mixed it with shallots and mushrooms sautéed together. And I reduced the amount of mayo mixture making about half and agree the recipe would have made far too much.
I have made this recipe twice in one week. It tastes great. The combination of the sauce and the salmon is terrific and, when wrapped in the pastry, makes a great dinner which is easy to make. Be sure to dry off the salmon with a paper towel so that there is not too much moisture getting in to the pastry.
Use mozzarella instead if feta is not your favorite!
I made this using 2, 6 oz portions of salmon, adjusting the recipe in amount but otherwise according to the recipe as outlined. My wife and I thought this was very good. I would like to try using goat cheese next time instead of feta thinking that the goat cheese might improve over feta. This recipe raises the bar for salmon. Nice combination of spices & Mustard, spinach and cheese, IF you are on a salt restricted diet, the salt could be omitted and not really noticed given the combination of other spices used.

Loved it…but I gave it a 4 because I definitely doubled the recipe but only used 1 cup of mayo and 2 tablespoons of Dijon and it was a perfect amount…and i did sprinkle on black sesame seeds on the egg wash. I also did a light drag of hash marks. It came out perfect…puffy and crispy too.

I made this with smoked salmon instead. Traded feta for cream cheese(I added a touch of milk to make more spreadable )and mixed in minced garlic with fresh herbs salt and pepper with a hand blender. Spread the cream cheese filling topped with spinach and smoked salmon and it was a hit! My brother and boyfriend are both chefs and loved it!
