Ingredients
- 1 (15-ounce) can salmon (bones removed)
- 2 green bell peppers, finely diced
- 1 yellow onion, finely diced
- Salt and pepper
- 3 cups yellow cornmeal
- 1 cup all-purpose flour
- Vegetable oil, for frying
- Ketchup, for serving, optional
- Hot sauce, for serving, optional
Instructions
- Combine salmon, bell peppers, and onion in a bowl. Season with salt and pepper. Shape by hand into patties, as you would a hamburger. In a separate bowl, combine cornmeal and flour. Roll salmon patties in the cornmeal mixture.
- Heat about 1-inch of oil in a large, heavy skillet to 340 degrees F. Carefully place patties, in batches as necessary, in the hot oil and fry for 3 minutes on each side or until golden brown. Drain patties on paper towels. Serve with ketchup and/or hot sauce, if desired.

Even with 1 egg as a binder, the patty completely fell apart when I tried to “roll” it in the corn meal/flour mixture. I rolled and tried to make patties by rolling the pieces together and trying to make them into a patty — NO JOY. They still fell apart. I’m not sure I can even fry them without making a hash.
I used canned (not a great choice but that what was convenient). In any event, this recipe rocked! My husband and I loved it with only a little lemon juice on the side.

I enjoyed the flavor of the basic croquette but the recipe called for entirely too much corn meal. 3 cups of corn meal for only 1 can of salmon turns these babies into cornmeal croquettes!
I tried this and it was GOOD!…Need I say More???? I think not
I added onions and a half of green pepper after I sauteed them. Use a little flour and cornmeal mixed together. 3 cups of cornmeal is too much. Added an egg and cracker meal.

I added another can of salmon, 3 eggs and Emerils Essence and it was good
However, like others, had to add a binder, some egg and bread crumbs, otherwise it fell apart too easily.
These are almost exactly the same as my late mother made- brought back memories
