Ingredients

  1. 1/2 head iceberg lettuce, cut into small chunks
  2. 12 cherry tomatoes
  3. 8 ounces mild Cheddar, cut into cubes
  4. 1/2 English cucumber, cut into chunks
  5. 1/4 cup extra-virgin olive oil
  6. 2 tablespoons red wine vinegar
  7. 1 teaspoon Italian seasoning
  8. Kosher salt and freshly ground black pepper

Instructions

  1. Build each skewer by threading on a chunk of lettuce, a tomato, a cheese cube, lettuce chunk, cucumber chunk and finally, another lettuce chunk. Arrange the skewers on a platter.
  2. Whisk together the oil, vinegar, Italian seasoning and some salt and pepper in a small bowl. Right before serving, brush the dressing onto the skewers.

First rate recipe. Husband and I love extra-sharp cheddar, but it would have only crumbled due to aging. However, Velveeta worked perfectly and it has a piquant flavor profile that adds so much to this recipe. We’ve found mild cheddar has very little flavor and never use it.

I had a hard time putting cheddar cubes onto the sticks without the cheese splitting.  I tried different size cubes but but all of them split.  Any suggestions?

If only I would have followed the directions!!  I made these for a potluck and instead of waiting till serving time to add the dressing, I added it right after they were made (3 hours before eating), well, needless to say,  the lettuce was quite limp and some of the dressing dripped off creating a small pool on the bottom of the serving container.  Definitely need to hold off and until just before serving.  Also, the concept is nice, but I found it a bit tricky to get it off the stick without using a fork, and found it challenging trying to get it off with a plastic fork while balancing my plate on my lap.  I think next time I will just put everything in a bowl; not as much fun, but more do-able in my opinion.

Just saw this today. What a great way to bring a salad to a picnic or pot luck, and you can use a variety of ingredients, a little sausage wouldn’t hurt. Thanks for all the amazing ideas you give me.
