Ingredients

  1. ½ cup water
  2. ⅓ cup wheat berries
  3. 1 teaspoon butter
  4. 1 cup steel-cut oats
  5. ⅓ cup chopped pecans
  6. ⅓ cup slivered almonds
  7. 3 cups boiling water
  8. 1 cup chopped dried apples
  9. ⅓ cup white sugar, or to taste
  10. 1 ½ tablespoons ground cinnamon
  11. 1 teaspoon salt

Instructions

  1. Combine 1/2 cup water and wheat berries in a small saucepan; bring to a boil. Cover saucepan, remove from heat, and set aside for wheat berries to soak, about 10 minutes.
  2. Melt butter in a 2-quart saucepan over low heat; cook and stir oats, pecans, and almonds in melted butter until golden and fragrant, about 5 minutes. Carefully pour boiling water into nut mixture; add wheat berries and dried apples. Cover saucepan and cook over low heat, without stirring, until wheat berries are tender, about 20 minutes; stir in sugar, cinnamon, and salt.

This is my all-time favorite breakfast! It reminds me of something my mom used to make for our family when I was growing up. It has the perfect amount of ‘chew’ if you enjoy different textures when you eat. And its whole grains and nuts so even just eating a ½ to 2/3 cup portion keeps me full for a surprising length of time! The proportions are perfect! I like to change my flavor based on the mood I’m in each day, so I omit the dried apples and cinnamon and reduce the water by 1/2 cup and keep this recipe as a base. I really like the of the grains and nuts, so I only usually add the full 1/3 cup sugar when I’m making a triple-batch to flavor the entire batch. Some of my favorite morning flavor additions are a touch of maple syrup, or a spoonful or two of flavored yogurt, or a few pieces of canned peaches, or diced apples as the author suggests. I like to make a double or triple batch and keep the extra portions in a quart bag in the freezer. The morning I eat my last serving, I take one of the freezer quart bags out of the freezer and set in the fridge and it’s ready by the next day. This truly is my favorite breakfast! This was fantastic. I replaced the cup of oats with a cup of cooked hulled barley. Replaced the nuts with mixed roasted nuts. Also, cut the sugar in half. Cut up a banana instead of the dried apples. Definitely making this again.

I used cracked wheat berries, 1 C. shredded apple in place of the dried and used 3 T. maple syrup + 1 T. honey in place of sugar. The texture is excellent, crunchy and chewy as expected. The techniques used to cook the grains are spot-on, it came out perfect. I grated a little bit of nutmeg into mine. I will be making this again!
