A friend gave me the initial concept for this. To make these delicious mini sandwiches, I changed the type of cheese and bread and added a finishing touch. Any bacon will work great, but I used low-sodium bacon. This makes a terrific breakfast or light supper sandwich when served with a side salad of mixed greens and fresh berries.

Ingredients
- 1 cup semisweet chocolate chips
- ½ cup white sugar
- 3 tablespoons corn syrup
- ½ cup rum
- 2 ½ cups crushed vanilla wafers
- 1 cup chopped walnuts (Optional)
- ⅓ cup confectioners’ sugar
Instructions
- Place chocolate chips into a microwave-safe medium bowl. Heat in the microwave for 1 minute, stir and then continue to heat at 20 second intervals, stirring between each, until melted and smooth. Stir in sugar and corn syrup. Blend in rum. Add crushed vanilla wafers and chopped nuts. Mix until evenly distributed. Cover and refrigerate until firm.
- Roll the chilled chocolate mixture into bite-size balls. Roll balls in a mixture of ground nuts and confectioner’s sugar, or just plain confectioner’s sugar. Store in a covered container for a week before serving to blend the flavors.

I used pecans in place of walnuts. Easy to make and I shared some with my neighbor.
Optional Substitutions: cocoa drink mix for chocolate chips – since cocoa mis contains sugar or other sweetener, the confectioner’s sugar may be omitted; blanched raisins or small berries for walnuts – chopped nuts as an ingredient might be a problem for some people but others don’t find raisins appealing. Adding some small plump fruits will give the rum/bourbon balls an extra flavor burst. Also, the cornstarch in confectioner’s sugar may be the cause of an undesired gritty texture. So, if it is to be used, it might be better to mix it first with the vanilla wafer crumbs before blending in the wet ingredients. (I wouldn’t use it at all except for the outer coating.)

Made as directed…. Tasted good but GRITTY…. I suggest you find a recipe using powdered sugar. I used extra fine sugar and the texture was such a disappointment.
I put sugar in food processor to get it super fine as well as graham crackers – melted chocolate in microwave dumped rest of ingredients in and let my mixer beat it until smooth – no grit here! Added some rum soaked raisins and orange zest. Right on! I’m buzzed already!
I make a triple batch every year for NYE. Nothing is ever left at the end of the night. That says it all. Super easy to make. Best made a t least a few days before you want to eat them. I up the Bourbon a bit to the point just before it becomes to wet. It sets up very firm after a few hours in the fridge and makes it easy to work with. A winner every year!
Turned out very good. Right amount of rum for the sweetness. I replaced corn syrup for 100% maple syrup and so glad I did!

It was gritty due to using the granulated sugar. Needs to use powdered sugar instead.
I made these twice during the holiday season. The first batch was rolled in either powdered sugar or crystal sprinkles. The second batch was all powdered sugar. The rum taste really comes through in a delectable way! Be careful not to chill in the fridge too long before rolling as it makes it harder to roll into balls.
I made these with Rum and used graham crackers for Christmas. I thought they were just OK and evidently so did others because they didn’t go as fast as they other treats I made. Probably won’t make again.
This recipe is always a major requst from friends and family. Depending on the request, I’ve made it using different types of alcohol and toppings from sugar, nuts, glaze, jimmies.

They were a little drier than expected, but tasty. It seemed to take a while to incorporate the ingredients (maybe I had them in the wrong order?). I tried a variety of rolled coatings (nuts, powdered sugar, cocoa powder, and candy sprinkles); the overall “favorite” coating was the candy (the cocoa was particularly disappointing). This was a great item to take to a holiday party.
