Bran cereal is used in this muffin recipe. After having a baby, my midwife gave it to me. absolutely certain to improve everything, and I do mean everything!

Ingredients

  1. ½ cup raisins
  2. 1 egg
  3. ¾ cup milk
  4. 1 ½ cups bran cereal (such as Kellogg’s All-Bran® Original Cereal)
  5. 1 cup whole wheat flour
  6. 1 teaspoon baking soda
  7. 1 teaspoon ground cinnamon
  8. 2 tablespoons melted butter
  9. 1 apple, cored and shredded
  10. 1 ripe banana, mashed
  11. ½ cup honey

Instructions

  1. Preheat an oven to 400 degrees F (200 degrees C). Grease 12 muffin cups or line with paper cupcake liners.
  2. Cover raisins with water in a microwave-safe bowl; microwave on High for 1 minute to plump. Drain raisins and set aside.
  3. Beat egg with milk in a bowl; mix in bran cereal. Let mixture stand until cereal absorbs liquid, about 5 minutes. Gently mix in plumped raisins, flour, baking soda, cinnamon, melted butter, shredded apple, mashed banana, and honey; stir a few times to mix.
  4. Spoon batter into prepared muffin cups. Bake in the preheated oven for about 20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.

I love these! Healthy and tasty. The fruit makes them moist. Definitely making again. Like others said, I did not soak raisins but added them to the cereal milk mixture to soak. I used plant milk and 1 egg and in another batch I used a flaxseed egg to make them vegan. Oil instead of butter in both batches.

These were pretty tasty and a good bran boost when I needed it! I did have a couple of modifications in my version due to personal tastes – I left out the raisins and used applesauce in place of both the apple and the butter.

Great, simple recipe! It also works with more typical muffin ingredients. I use sugar instead of honey and canola oil instead of butter because we eat A LOT of these and it keeps the price down. I make a 4x batch every few weeks and I’m always shocked how quickly my kids demolish these high fibre snacks! It helps that I make one more substitution; chocolate chips instead of raisins! I’ve also made these without apples (adding extra bananas) and with apple sauce instead of apples.

These are a staple in my fridge. I have one for breakfast almost every morning. I’ve made a few adjustments over the years just for my taste preferences. I use dried cranberries instead of raisins, I substitute 2 tbsps applesauce for the butter and I add 1/2-1 cup of chopped walnuts. The recipe is great just as written as well.

I substituted the white flour for whole wheat ans honey roasted walnuts for the dried fruit. I also added 1/2 teaspoon baking powder. I was very surprised by how good it tasted. Roxie’s recipe rocks.

Absolutely delicious. Don’t change a thing. I used my food chopper (purchased at a cooking party) to finely chop the apple and left the red peeling on it. Also, I freeze bananas when we have too many ripe. This is a great use for that one oddball frozen banana! Let it thaw a few minutes, peel with a knife and it’s ready for baking.

These are really good. Could not find all bran cereal but used bran flakes. Forgot the butter (found in microwave after they were in the oven) but did not effect the taste. Will make again

These were great. I needed to use up some ripe bananas, so I used two of those and no apples. I also added 1 tsp vanilla and 1/2 tsp salt. These are going to become a staple! Oh, I also skipped the raisins because I have a hater in the family. But I know I would LOVE the addition of raisins. Next time.

Very good muffins! Everyone thought they smelled wonderful baking and tasted great! Note that I did make some vegan adjustments to the recipe to make them appeal to all house members. First substituted an additional 1/2 mashed banana for the egg, a mixture of all-purpose flour and ground flaxseed for the whole wheat (approx. 50/50) unsweetened almond milk, vegan butter and added 1 tsp baking powder to help it rise a little more per another persons suggestion. I will definitely make again, though may try substituting apple sauce, pears or something else for the egg for a slightly more balanced flavor.

My husband loves these. I have made them several times now. As other reviewers said, these do not rise much (even with 1/2 tsp baking powder added) so fill muffin cups more than you normally would. I made the following changes after reading the reviews: 1) Substituted applesauce for the butter 2) Added 1/2 teaspoon baking powder and 1 teaspoon vanilla and 3) Cut apple into small chunks.

Love these muffins! My first time making bran muffins. They turn out great! They look so pretty and taste yummy. I didn’t have whole wheat flour so I used half multigrain and half all purpose flour. It didn’t say how much to fill the muffin tin so I divided them evenly into 12. The baked exactly 20 minutes. So good!
