Rotisserie Chicken Tacos

This dish is perfect for using up leftover rotisserie chicken or turkey. You can host a fun “Taco Bar Night” for a celebration or with the kids.

Ingredients

  1. 12 corn taco shells
  2. 2 tablespoons canola oil
  3. ½ cup diced onion
  4. 2 cloves garlic, pressed
  5. 1 pound rotisserie chicken, meat pulled and shredded
  6. 1 (8 ounce) can tomato sauce
  7. 1 cup salsa, divided
  8. 1 (1 ounce) package taco seasoning
  9. 1 (15 ounce) can vegetarian refried beans
  10. 2 cups shredded lettuce
  11. 2 cups shredded Mexican cheese blend
  12. 1 cup chopped green and red bell peppers
  13. 1 cup diced tomatoes

Instructions

  1. Preheat the oven to 350 degrees F (175 degrees C). Place taco shells on a baking sheet.
  2. Heat oil in a large skillet over medium heat; stir in onion and garlic. Cook and stir until the onion has softened and turned translucent, about 5 minutes. Add chicken, tomato sauce, 3 tablespoons salsa, and taco seasoning; stir well. Cook until heated through, stirring occasionally, 5 to 6 minutes.
  3. Meanwhile, put refried beans in a microwave-safe container. Stir, cover, and microwave on high until hot, 3 to 5 minutes. Stir again and set aside.
  4. Warm taco shells in the preheated oven for 3 to 5 minutes.
  5. Place warmed taco shells on a serving platter. Lay out remaining salsa, chicken mixture, refried beans, lettuce, Mexican cheese, bell peppers, and tomatoes in nice serving bowls and allow diners to fill their own tacos.
  6. Soft taco-sized tortillas can be used instead of taco shells.

Is it off the hook good? No. But it’s pretty tasty. I think it has a nice depth of flavor if you up the garlic and taco seasoning quantities. I also simmered the chicken for maybe 20-30 mins. It was clear that the taco seasoning needed time to meld with the chicken. Clearly the taste of this meal will be largely dependent on the salsa used and quality of rotisserie chicken (hint: Costco). I can tell it will be better the next day. This will be a repeat and so easy.

I’m sorry I thought this was just okay. I thought it had too much tomato flavor; I would leave out the tomato sauce and just add a little water with the taco seasoning packet.

My family loved it!!!! Made it pretty much the same just without the beans & green peppers but served it with sour cream on the side…go good!!!!

The chicken was not as flavorful as we would like, but the additional ingredients saved the day. I adjusted the recipe slightly to reflect our tastes, and baked the tortillas topped with the cheese.
