Ingredients

  1. 1 store-bought rotisserie chicken (about 3 pounds), white and dark meat hand shredded, then roughly chopped
  2. 1 cup mayonnaise
  3. 1/3 cup Dijon mustard
  4. 1 teaspoon paprika
  5. 1 teaspoon garlic powder
  6. 2 hard-boiled eggs, chopped
  7. 1 celery stick, diced
  8. 1 bell pepper, diced
  9. Kosher salt and freshly ground black pepper
  10. 6 croissants, split

Instructions

  1. Mix together the chicken, mayonnaise, mustard, paprika, garlic powder, eggs, celery and bell pepper in a medium bowl; season with salt and pepper. Cover and refrigerate until chilled, about 30 minutes.
  2. Serve on split croissants.

I love this recipe I do add a small red onion(I love onion in everything lol) 2/3 mayo and 1/3 miracle whip for a little sweetness.

Added minced red onion and a chopped dill pickle. ( skipped the eggs cause I cannot stand boiled eggs) served along carrot, sliced red pepper, celery sticks and dip. For an awesome no cook dinner- no one wants to cook after whole day of yard work..very good sandwich!

I have made this recipe many times. My son and I love chicken salad.
I do add toasted nuts, whatever I have on hand for extra crunch
Also for a spin add a teaspoon of curry powder.
