Ingredients
- 1 pound rotini pasta
- 1 1/4 pound Roma tomatoes, seeded and diced
- 1/4 cup extra-virgin olive oil
- 1 large lemon, zested and juiced
- 1 cup crumbled ricotta salata cheese or feta cheese
- 1 teaspoon salt
- 1/2 teaspoon freshly ground black pepper
Instructions
- Bring a large pot of salted water to a boil over high heat. Add the pasta and cook until tender but still firm to the bite, stirring occasionally, about 8 to 10 minutes. Drain pasta, reserving 1 cup of the pasta water.
- Place the hot pasta in a large bowl. Add the tomatoes, olive oil, lemon zest and juice, ricotta salata cheese, salt, pepper, and 1/2 cup of the pasta water. Toss to combine, adding the remaining pasta water, if desired. Serve.

We loved this salad. For just the two of us I cut it in half, used feta cheese, and it was more than enough for two meals. Will definitely make it again, and soon.
This is a great ‘macaroni salad’ to bring to a picnic or a ‘light lunch’ to bring to work. Simple ingredients and very refreshing. I made the recipe as written, but since I love fresh herbs, added a 1/2 tsp of fresh thyme.
This is the most easiest dish. I added mozzarella instead of ricotta salta because i’m not a fan of it and used shrimp instead of tomatoes, cause I don’t like tomatoes either. Very tasty and easy.
It is a wonderful pasta dish. When I have leftovers (which isn’t often! I add some shredded chicken and chicken broth to the pasta and heat. It makes a really wonderful soup.

This recipe was amazing! It tastes great and only takes a few minutes to make! I used garlic and herb feta cheese instead of ricotta salata, and it was DELICIOUS! It’s a perfect pasta salad for the summer!

I’ve made this a few times (with the feta for my very picky husband and we both love it! He even requested it recently. It’s so simple to make but it has a great, fresh, light taste.
