Rocky Road Granola Bars

Ingredients

  1. Cooking spray
  2. 2 1/2 cups rolled oats (225 grams)
  3. 2 tablespoons ground flax seed (14 grams)
  4. 1/2 cup crumbled digestive biscuits (60 grams)
  5. 1/2 cup finely chopped walnuts (65 grams)
  6. 1/2 cup chocolate chips (60 grams)
  7. 1/4 cup brown sugar (50 grams)
  8. 1/4 cup honey (85 grams)
  9. 1/4 cup golden corn syrup (85 grams)
  10. 6 tablespoons unsalted butter (85 grams)
  11. 1/2 teaspoon vanilla extract
  12. 1/4 teaspoon kosher salt
  13. 3/4 cup mini marshmallows, optional (40 grams)

Instructions

  1. Grease a 9-inch square baking pan with cooking spray, line the bottom with parchment paper and set aside.
  2. Combine the oats, flax seed, digestive biscuits, walnuts and chocolate chips in a large heat-proof bowl.
  3. Combine the sugar, honey, corn syrup and butter in a small saucepan set over medium heat. Cook, stirring occasionally, until the butter melts and the mixture starts to boil. Once it has come to a light boil, cook the mixture for 2 minutes to dissolve the sugar.
  4. Remove the pot from the heat and stir in the vanilla and kosher salt. Add to the oat mixture and stir to combine. Stir in the marshmallows, if using.
  5. Scrape the mixture into your prepared pan and press firmly into an even layer. Place the pan in the fridge for about 1 hour to firm up.
  6. Carefully lift the granola bars out of the pan and slice into 12 equal bars. Wrap individually in parchment, wax paper or plastic wrap and place in a tightly sealed container.
  7. For a chewier bar, store in the fridge. For softer bars, store in the cupboard.
