Roasted Radishes

Ingredients

  1. 8 ounces radishes
  2. 2 tablespoons olive oil
  3. Kosher salt and freshly ground black pepper
  4. 1/2 lemon, juiced

Instructions

  1. Preheat the oven to 400 degrees F. Line a baking sheet with aluminum foil.
  2. Halve the radishes lengthwise and place them in a bowl. Toss with the olive oil and season with salt and pepper.
  3. Transfer the radishes to the prepared baking sheet and bake until tender and a little golden, about 20 minutes. Sprinkle the lemon juice on top and serve immediately.

Great way to make “mock” wedges for a low carb alternative to potatoes. Add some, bacon bits, shredded cheese & sour cream or ranch dressing and you have mock loaded baked potatoes wedges. Roasting them really takes away the bitterness.

Really awful. Reminds me of cooked carrots but not as good. And I really don’t like cooked carrots.

I enjoy radishes in all fashions, my husband doesn’t, so I thought this would be worth a try. They are ok, it takes the zippiness out of them, but its nothing special, but a new take on an old fave. Husband said they were ok, but I can tell I don’t need to repeat this one!

I usually love raw radishes with just a sprinkle of salt.  However, I happened to pick up a batch at the store that was particularly spicy (too spicy).  I thought of this and tried it.  I didn’t roast them though.  I cleaned them, cut in half, and sautéed them cut side down in a cast iron skillet with just a drizzle of oil and pat of butter and S&P.  It really did change the flavor and took the spiciness out of them.  Definitely worth a try!

Amazing! I really loved the flavor. I sliced my radishes several times, as they were larger then the ones Katie had on the show. I also added extra lemon juice. Can’t wait to make them again,way to go Katie!

These were all right. I was intrigued when I saw the episode of The Kitchen because I always thought of radishes as a vegetable to eat raw in a salad or on a taco or something. Roasting totally changes them, so if you don’t like them raw, try it. Why not? However, I usually LOVE roasted vegetables, and these were not a wow. But that being said, we do need to eat more veggies, and these are cheap and easy, so we will probably make them again.

This was just ok for me. I think the flavor was very mild which I liked, but in the same respect I wanted more “kick” and I thought the lemon would provide that. Maybe I would try again with more lemon, some zest and red pepper flakes.

was intrigued by the thought of roasting the radishes. I am not a fan of radishes, like Sunny they were always bitter. I made them last night and they are WONDERFUL! Text my 2 children a picture and told them this is my new favorite thing!
