Roasted Pumpkin with Brown Sugar

Although risotto has a bad record for being difficult to make, this recipe is actually rather simple and tastes a lot like shrimp scampi.

Ingredients

  1. 1 (2 pound) pumpkin
  2. ⅔ cup vegetable oil
  3. ½ cup brown sugar

Instructions

  1. Preheat the oven to 375 degrees F (190 degrees C).
  2. Cut pumpkin into pieces and remove skin. Cut away seeds and fibrous tissue; discard. Rub oil onto pumpkin pieces, followed by brown sugar. Place onto a baking sheet.
  3. Roast in the preheated oven until tender, 30 to 40 minutes.
