Ingredients

  1. One 2 1/2-pound boneless pork loin roast
  2. 1/4 cup olive oil
  3. Kosher salt and cracked black pepper

Instructions

  1. Preheat the oven to 400 degrees F.
  2. Drizzle the oil over the pork and sprinkle liberally with salt and pepper. Transfer the pork to a rack over a heavy-bottomed roasting pan.
  3. Roast the pork until a meat thermometer inserted into the thickest part of the loin reads 140 degrees F, about 1 hour.
  4. Let the pork rest for 10 minutes, before storing and reserving for leftover recipes.

Cook for 1 hour??  Are you kidding, are you eating this or using it for a bat??

At 400 degrees, 15 – 20 minutes until it reaches 145 degrees – an hour, seriously ~
