Ingredients
- 2 ½ tablespoons olive oil
- 2 tablespoons dried sage
- 2 tablespoons garlic powder
- 2 teaspoons salt
- 1 tablespoon onion powder
- 1 (5 pound) pork leg with skin
- 1 large onion
- 6 cloves garlic, halved
Instructions
- Preheat the oven to 430 degrees F (220 degrees C).
- Combine olive oil, sage, garlic powder, onion powder, and salt in a small bowl.
- Rinse pork leg and pat dry with a paper towel. Rub seasoned olive oil onto pork leg.
- Slice onion and separate layers into rings. Place onion rings and garlic halves in the bottom of a roaster. Place pork on top of onions and garlic.
- Roast in the preheated oven for 40 minutes. Reduce oven temperature to 355 degrees F (180 degrees C) and roast until an instant-read thermometer inserted into the center reads at least 145 degrees F (63 degrees C), about 1 hour 20 minutes more.
- Remove from the oven and slice for serving.

I can’t believe that “Allrecipes” has this recipe. This is the worst recipe I have ever used. As I was putting it together I new it wasn’t right. 1) way to much garlic powder in the rub and not enough olive oil 2) I read the instruction 3 times to make sure I didn’t miss something and it never mentions anything about adding water or liquid of any kind. So at I first didn’t, until the onions and garlic cloves began to burn. Then I added water and brushed more oil onto the roast. This recipe SUCKS I give it a -5 stars
The pork leg was delicious. I will definitely be making it again. I used pimento berries and garlic instead of onions with garlic to set the pork as it roasted. Turned out great Thanks for keeping it simple.
Perfect to perfection
I followed the recipe as best I could but cooked it in my air fryer. My husband and I both gave it a five-star rating. I will definitely be making it again.
