Level: Easy
Total: 1 hr
Active: 15 min
Yield: 1 cup

Ingredients

  1. 2 to 3 whole heads garlic
  2. Extra-virgin olive oil
  3. Kosher salt and freshly ground black pepper
  4. 1 cup mayonnaise
  5. 1/3 cup fresh lemon juice
  6. 2 tablespoons grated Parmesan
  7. 1/2 tablespoon Dijon mustard
  8. 1/8 teaspoon cayenne pepper
  9. Dash Worcestershire sauce
  10. Chopped fresh parsley, for garnish

Instructions

  1. Preheat the oven to 425 degrees F.
  2. Take the whole heads of garlic and cut the tops off to expose the garlic cloves. Place on a large piece of aluminum foil and drizzle lightly with olive oil and sprinkle with salt and pepper. Wrap up the foil into a tight pouch, and then place in the oven and roast for 35 to 45 minutes. Remove from oven and allow to cool. Squeeze the pulp from the skins (you’ll need 1/3 cup).
  3. In a food processor, combine the roasted garlic, mayonnaise, lemon juice, Parmesan, Dijon mustard, cayenne pepper, Worcestershire sauce and some salt and pepper. Pulse until well combined. Refrigerate to allow the flavors to meld together. Garnish with parsley.

Delicious! I cut the lemon down to two Tablespoons and cheese to 1 T.

Like another reviewer said, it’s important to let this sit for at least a few hours so the flavors blend, otherwise it tastes mostly like mayo. Your patience will be rewarded!

Love it.
A little too much lemon for my taste.
Made a note to halve it next time.

I made this garlic aioli for a Superior beef ( 3 different type of ground beef) hamburger with caramelized onions & bacon on a toasted brioche bun. Yummy

This was delicious. My 7 year old loved it! I added some sugar to round out the acid from the citrus and hot sauce instead of cayenne pepper because I didn’t have any. Such a versatile condiment!

Also agree too much lemon. Added some smoked paprika and rounded it out.
