Ingredients
- 6 ears fresh corn, unhusked
- 1/4 pound butter (1 stick), room temperature
- 2 teaspoons chili powder
- 1 lime, zested
- 1 lime, cut into wedges
Instructions
- Preheat oven to 350 degrees F.
- Place the corn in its husks directly on the oven rack and roast until the corn is soft when you press on it, 30 to 40 minutes.
- While the corn is roasting, combine the butter with the chili powder and lime zest.
- Peel down the husks and tie in a knot to use as a handle while eating. Rub the corn with soft butter mixture, and garnish with a lime wedge. (This roasting method produces the sweetest corn I have ever tasted.)

The best corn on the cob I have ever tasted. So easy to make and peel AFTER you roast it. The chili lime butter just gives the zing with the sweet corn. Wonderful recipe Tyler.
Simple and good. Can never go wrong with roasted corn. Adding the smoky flavor of a chili spiced butter and the zestfulness of the lime to give it a southwestern kick was wonderful and my corn was perfectly crisp and juicy at 35 minutes in a non convection oven. Also easy enough for a youngin to help out with.
To the person below, actually by leaving the silks on during cooking, they will all come off cleanly with the husks! So much easier than trying to peel back the husks and removing silks before cooking try it!
This would be 5 stars with one exception. You should peel the husk down and remove the silk, then put the husk back before placing in the oven. It’s much easier when it’s cold and you’re not starving!

This is the only way to make sweet corn. We tried it and it is amazing. The corn becomes so sweet and tender. We will never make it another way again!

If you’re looking for something different, this isn’t a bad alternative. I actually added one small jalepeno pepper, finely minced, to the mixture as well as the zest of the lime. This left a very subtle heat on the tongue but nothing overpowering. Overall, it lacked any real WOW factor for me but it’s still a nice change of pace…..however, I still like the traditional butter and salt. I also prepared the corn on the outdoor grill since that is the only way I cook corn on the cob.
Wow, I really wasn’t expecting too much for this, but it is awesome! I didn’t have Chilli powder so I mixed together a little Cayenne pepper and paprika and it was great! I don’t think I could eat corn any other way!
