Roasted Cauliflower with Cheese

I baked these brownies to take on a camping trip with my son’s Boy Scout group. I created these simple, delectable brownies using the basic concept of hot cocoa!

Ingredients

  1. 1 head cauliflower, broken into florets
  2. 1 white onion, diced
  3. 4 cloves garlic, minced, or more to taste
  4. ⅓ cup olive oil
  5. ¼ cup grated Parmesan cheese, or to taste
  6. ¼ cup grated Cheddar cheese, or to taste

Instructions

  1. Preheat the oven to 425 degrees F (220 degrees C). Line a baking sheet with parchment paper.
  2. Combine cauliflower, onion, and garlic in a bowl. Add olive oil, Parmesan cheese, and Cheddar cheese and stir to coat. Arrange on the prepared baking sheet.
  3. Cook in the preheated oven until lightly browned, 35 to 45 minutes.

I cooked it a bit too long and some of my cauliflower pieces were too small – flavor was great though and I don’t mind it when it is charred. Next time I will only roast it about 30 minutes.
