Ingredients
- ¼ cup butter, softened
- 1 tablespoon chopped fresh dill
- 1 clove garlic, minced
- 1 teaspoon grated lemon zest
- ½ teaspoon ground cumin
- ¼ teaspoon salt
- ¼ teaspoon ground black pepper
- 1 large head cauliflower, leaves trimmed
Instructions
- Preheat the oven to 350 degrees F (175 degrees C).
- Mix butter, dill, garlic, lemon zest, cumin, salt, and black pepper in a bowl.
- Cut cauliflower stem flush with the rest of the head so it can stay upright in a casserole dish. Spread butter mixture evenly over the top and sides of cauliflower, place in a casserole dish, and cover with foil.
- Roast in the preheated oven until tender and cooked through, about 1 hour and 15 minutes. Transfer to a platter and spoon any liquid in the casserole dish over cauliflower.

I’m….bummed. Cauliflower is one of my favorite vegetables so I loving trying different flavors and cooking methods. My cauliflower was on the smaller size so I adjusted cook time accordingly. I’m not sure if it was the cumin, dill, lemon combination or if it’s because the butter just cooked off and pooled at the bottom of the roasting dish? Or? It might just be me/my tastebuds?? Over 100 people think this is the bomb. Not my favorite but glad I tried. Thanks farmerbrown!
Cauliflower crack- we couldn’t stop eating it and ran out before everything else. Delicious as is. Cauliflower naturally comes in different sizes so start with the time here and adjust as necessary… it’s definitely worth it!
Very good. I also threw in some broccoli with the head of cauliflower. Excellent.
My friend showed me this years ago. Spread butter and put what ever spices you like. Throw in round little roaster with rack if you have one. Do two if entertaining if you like calliflower it’s a hit. With kids melt cheese to pour over it.

Came our great I used I can’t believe it’s not butter. With salt pepper, minced garlic, cayenne pepper and complete seasonings and mince thyme.
Very good! A smallish cauliflower required the time in the recipe, so if you use a large cauliflower, you might need a little more time. After it was done, I had to sprinkle a bit of salt on the top – the amount in the recipe was too conservative (still, wait until it’s done to add salt so you don’t ruin it!). This is now my go-to recipe because it was very easy and delicious.
Pretty good – I cut it up instead of cooking it whole because I wanted it to cook faster.
Delicious twist. I used 1/4 tsp cumin, dried lemon zest, black pepper, no dill, less garlic, and butter and roasted it for 2.5 hours at 300°. It was a small head of cauliflower and was a bit too soft. I plan to make it again.
Just so good! I didn’t have a lemon so I just poured some lemon juice in my cast iron skillet. Don’t omit the lemon for any reason, it adds such wonderful flavor! This is so good, and so easy!
Super easy and delicious. Now my favorite way to make cauliflower. I used a 1/3 tablespoon of dried dill instead.
Terrific recipe, I’ve been looking for a recipe for whole cauliflower for a while and this one checked all the boxes. It was delicious and the whole fam agreed. Definitely a keeper!

I’m a cauliflower fan and a dill fan, but didn’t like doll on this cauliflower. It takes way too long to cook and the cauliflower was just o.k. Waste of time and cauliflower.

I wanted to love this. And I did love making the entire head of cauliflower and the presentation. I found the flavor a bit bland. The spice to cauliflower ratio was too low in my opinion.
Thought this was easy and delicious . The only change I made was to use less cumin as I’m not a fan.
