Roasted Broccoli Steaks

These roasted broccoli steaks are my favorite way to eat broccoli; the edges get slightly charred and crispy, while the stalks get tender and buttery. The key is to heat the pan up in the oven before adding the broccoli; this allows it to begin to crisp up the second it hits the pan.

Ingredients

  1. 1/4 cup extra-virgin olive oil
  2. 2 tablespoons red wine vinegar
  3. 1/2 teaspoon smoked paprika
  4. 1/2 teaspoon garlic powder
  5. 1/2 teaspoon onion powder
  6. 1/4 teaspoon red pepper flakes
  7. Kosher salt and freshly ground black pepper
  8. 2 large broccoli crowns, sliced into 6 steaks
  9. Zest and juice of 1/2 lemon, plus lemon wedges, for serving
  10. Flake salt, for serving

Instructions

  1. Preheat the oven to 425 degrees F. Place a rimmed baking sheet in the oven for 10 to 15 minutes; this will help char the broccoli instantly when added.
  2. Add the olive oil, vinegar, smoked paprika, garlic powder, onion powder, red pepper flakes, 1/2 teaspoon salt and 1/4 teaspoon pepper to a large bowl and whisk to emulsify. Coat the broccoli steaks in the dressing.
  3. Carefully remove the baking sheet from the oven and immediately add the broccoli steaks in an even layer. Transfer to the oven and roast for 15 minutes. Remove the baking sheet, flip the steaks and return to the oven to cook for an additional 5 minutes.
  4. Remove the baking sheet from the oven and plate the broccoli on a serving platter. Top with the lemon zest, juice and flake salt. Serve immediately.

So much flavor in this recipe and a nice change from basic salt, pepper, olive oil! Great cut as broccoli steaks or just broccoli florets, if doing florets just watch the cooking time! Pre heating the pan is a must to get the broccoli cooking!!
