Ingredients

  1. 1 bunch broccoli (about 1 1/2 pounds), cut into florets, stems peeled and sliced or diced
  2. 2 tablespoons extra-virgin olive oil
  3. 3 cloves garlic, sliced
  4. Kosher salt and freshly ground pepper

Instructions

  1. Preheat oven to 450 degrees F.
  2. Toss the broccoli florets with the olive oil, garlic, salt, and pepper on a baking sheet. Spread them out and then roast, without stirring, until the edges are crispy and the stems are crisp tender, about 20 minutes.
  3. Serve warm.

I just made this tonight… It was beyond fabulous! I usually hate when people don’t make the recipe as posted… but after reading the rest of the reviews, I did everything the recipe called for exactly, except that I added 1/4 of a teaspoon of red pepper flakes (we like a little bite… But it was definitely not hot!) In order to make it easy (which is my favorite thing in the world!), I put the olive oil, minced garlic (from a jar!), kosher salt, course ground pepper, plus 1/4 tsp. red pepper flakes in a big bowl and then stirred it up to let the flavors blend while I cut up the broccoli florettes. I also cut up a container of baby Bella whole mushrooms (that I either cut in half or in quarters depending on size) because I thought that sounded great! I added the broccoli and mushrooms to the olive oil mixture in the bowl and stirred it around until coated. I poured it onto a nonstick foil lined baking sheet and roasted it for 15 to 20 minutes on 400 degrees (because my oven runs hot). It turned out perfectly and my family (of 8…yes, I have six kids!) loved it! This will be added to my frequently used rotation! My husband (!!) is actually the one who tends to be picky when it comes to vegetables, and he loved it!
