Roasted Asparagus with Smoky Gouda Cheese Sauce

Curry puffs made with this recipe are gorgeous when baked in the oven and are excellent as snacks or as an aperitif. With a delicate coconut milk base, they have a spicy and savory flavor. Traditionally, they are deep-fried in Malaysia. An updated version is provided here. As rolls, sealed pockets, or partially open bundles, you can wrap them.

Ingredients

  1. 8 ounces fresh asparagus, trimmed
  2. ½ teaspoon salt
  3. ½ teaspoon olive oil
  4. 2 tablespoons unsalted butter
  5. 2 tablespoons all-purpose flour
  6. 1 cup half-and-half
  7. ½ teaspoon dry mustard
  8. ½ teaspoon paprika
  9. 8 ounces shredded Gouda cheese

Instructions

  1. Preheat the oven to 400 degrees F (200 degrees C).
  2. Place asparagus on a large baking sheet in one layer and season with salt. Drizzle with olive oil and toss to coat.
  3. Bake in the preheated oven until soft, about 10 minutes.
  4. Meanwhile, for the cheese sauce melt butter in a saucepan over medium heat. Add flour and whisk until smooth and golden, about 2 minutes. Add half and half, mustard powder, and paprika; whisk for an additional 2 minutes. Add smoked Gouda cheese and whisk until cheese is melted and sauce is thickened, about 5 minutes.
  5. Transfer asparagus to a serving tray and spoon cheese sauce on top.

This was DELICIOUS! I made it exactly as the recipe indicated. The entire family loved it. I think the Gouda cheese sauce would be excellent on broccoli and cauliflower as well.
