Roasted Asparagus with Parmesan

My buddy gave me the recipe after she prepared it for a potluck at work. Both the making and eating of it are relatively simple. I’ve prepared it multiple times, and I hope you like the slightly unique take on chicken that I’ve given it. Serve with sourdough French bread.

Ingredients

  1. olive oil cooking spray
  2. 1 pound fresh asparagus, tough ends trimmed
  3. ¼ cup shredded Parmesan cheese
  4. 1 teaspoon sea salt
  5. ¼ teaspoon garlic powder, or to taste

Instructions

  1. Preheat oven to 400 degrees F (200 degrees C).
  2. Spray the inside of a 9×13 casserole dish with olive oil cooking spray. Place asparagus in the dish and lightly spray spears with cooking spray.
  3. Sprinkle asparagus with Parmesan cheese, sea salt, and garlic powder.
  4. Roast in preheated oven until fork easily punctures thickest part of stem, about 12 minutes.
  5. Cook’s note:
  6. The best way to keep fresh asparagus for a long while in the refrigerator is to slice off the stems and then stand them in a bowl with a couple of inches of water in the bottom. It keeps for a very long time this way. Add water as necessary.

Garlic was a nice add! It took 20 minutes to cook. I used shredded Parmesan. It did not melt. Gross! Next time I get a block of Parmesan and hand grate it.
