Ingredients

  1. 1 bunch fresh asparagus, trimmed
  2. 1 tablespoon olive oil
  3. salt and ground black pepper to taste
  4. ¼ cup herbed goat cheese, crumbled

Instructions

  1. Preheat the oven to 400 degrees F (200 degrees C). Line a baking sheet with aluminum foil.
  2. Arrange asparagus side-by-side on a baking sheet. Drizzle olive oil over asparagus; season with salt and pepper. Crumble goat cheese over asparagus.
  3. Roast in the preheated oven until cheese is slightly melted and asparagus are tender yet firm to the bite, about 10 minutes.
  4. This recipe is quite versatile. Gorgonzola, blue cheese, and shaved Parmesan cheese are all good substitutes.

This was good, a nice change from always just steaming my fresh asparagus. Like had been suggested, I added the cheese when there were only a few minutes of cooking time left. I wish I’d used less salt as the goat cheese was super salty! It’s a nice, simple recipe that tastes great, glad I found it.

I love asparagus and thought the addition of goat cheese would be the perfect complement to the asparagus. The asparagus perfectly cooked crisp tender and had a lot of flavor. I used plain goat cheese because that is what I had in the fridge, but, I think the herb variety would be even better. I will make again, but, I think next time I will add the goat cheese just the last few minutes instead of cooking the entire time. Thanks for the recipe!
