Roast Chicken with Herbed Mushrooms

Ingredients

  1. 1 (3 pound) organic free-range chicken
  2. Kosher salt and freshly ground black pepper
  3. 1/2 red onion, quartered
  4. 1/2 lemon, cut into 4 pieces
  5. 1/2 head garlic, about 6 cloves, smashed
  6. 1 bunch fresh thyme
  7. 1 1/2 tablespoons extra-virgin olive oil, plus more for drizzling
  8. 1/2 pound sliced bacon, cut in 1/2
  9. 3 pounds whole cremini mushrooms, wiped clean with a damp towel

Instructions

  1. Heat the oven to 400 degrees F.
  2. Pat the chicken dry with paper towels. Season the cavity with salt and pepper.
  3. In a large bowl combine the onion, lemon, garlic, half the thyme, and 1 1/2 tablespoons olive oil; season with salt and pepper and mix it well. Stuff the bird with the mixture. Using 2 (3-foot) pieces of kitchen twine, tie up the chicken: Tuck the wing tips between the wings and the body. Put the midpoint of the twine under the chicken, bring the ends up and around the wings, and pull them tight against the body. Bring the ends of the twine up underneath the legs, wrap the string around them, pull the legs together, and tie them tightly. Place the chicken, breast side up in a roasting pan, and layer the strips of bacon up breast until covered. Scatter over the remaining thyme, drizzle over some more olive oil and season everything with salt and pepper.
  4. Roast the chicken for 1 1/2 hours; arrange the mushrooms around the chicken 45 minutes after roasting. Baste with the pan juices every 20 minutes. The chicken is done when an instant-read thermometer registers 165 degrees F when inserted into the thickest part of the thigh (the legs should wiggle easily in their sockets.)
  5. Remove the chicken from the pan, cover with foil, and let stand for 10 minutes to rest. Serve the chicken with the roasted mushrooms and pan juices.

The chicken was moist, tender and the addition of the bacon really increased the amount of flavor! Mushrooms were good too. I mad the entire recipe and I cannot believe how all the flavors from each dish all came together with the perfect bite

First time I’ve roasted a chicken, and it went great! Didn’t do the bacon, and switched to white mushrooms. Did it in a baking dish, and will need to get a roasting pan & rack to make sure bottom isn’t saturated. I was worried that there was no liquid for basting in the first 20 min check, but there was plenty by the 3rd check. Will add more Garlic next time, and maybe rosemary.

This was VERY good! The grocery store where I live is terrible, so I had to substitute cremini mushrooms for baby bellas. It turned out to have wonderful flavor!!! I didn’t use any of the bacon–it really doesn’t need it at all, plus it just adds a lot of extra fat. The chicken is delicious without the bacon and I think the basting really kept it moist (I followed the every-twenty-minutes suggestion. Otherwise, the directions were perfect. I don’t know why this is rated intermediate, because it is very easy. It also makes the house smell wonderful!!!

OMG! I forgot about this episode. First time with bacon on chicken. I added mint, granny smith apple slices, cinnamon stick piece & carrot to stuffing ingredients. Maybe overkill, but have to use CSA items.

This is my first time with Misty Knoll Farm young chicken, as well. Am roasting potatoes instead of mushrooms. Also, trying to roast tomatoes & eggplant for a sauce.

Made last week! the cinnamon flavor was very exotic/prominent, but still blend well with other aromatics. Only trouble was the chicken was direct from producer, no weight listed. Probably was smaller than 3 lbs. Checked at about 1 hr & 15 minutes. Was done. I may have needed to let rest longer than 10 minutes. 1st day seemed a little dry (skin wonderful, tho. 2nd day wonderful & juicey warmed up in microwave… Will try again.
