Risotto with Ground Meat and Veg

Ingredients

  1. 4 to 5 cups liquid (I’m using chicken stock)
  2. Kosher salt and freshly ground black pepper
  3. 1/4 cup olive oil
  4. 1 1/2 pounds ground meat (I’m using sweet and hot Italian sausage)
  5. 1 onion, diced
  6. 1 1/2 cups arborio rice
  7. 1/2 cup dry white wine
  8. 1 cup peas or any leafy vegetable
  9. 1 cup grated Parmesan
  10. 1/2 cup fresh soft herbs, optional (I’m using finely chopped parsley)
  11. 2 tablespoons butter

Instructions

  1. Add the chicken stock to a pot, season well with salt and pepper and heat until hot. Keep warm.
  2. Meanwhile, heat a large round saucepan over medium heat and add the oil. When hot, add the sausage and cook, without stirring, until brown on both sides, 2 to 3 minutes per side. Break up the meat with a wooden spoon.  
  3. Add the onions and sweat for 1 minute. Add the rice, toss to combine, and lightly toast in the fat. Add the wine and cook, stirring, until the wine is absorbed.  
  4. Add 1 cup of the stock and cook, stirring, until the stock is absorbed. Continue to add the stock 1 cup at a time and cook, stirring after each addition until absorbed, until the rice is al dente, about 20 minutes. Add the peas. Remove from the heat and stir in the Parmesan, parsley and butter.

I made this for dinner last night and it was so delicious. This was both my first time making and eating risotto and I was admittedly a little nervous going in because there is a bit of reputation of risotto to be difficult to make but this was simple, quick, and perfect. I will absolutely be making this again and again!
