Ingredients
- 1 cup ricotta cheese
- 1/2 cup plain yogurt
- 1/2 cup raspberry jam, divided
- 2 cups granola, divided
- 1/4 cup sliced almonds, toasted (see Cook’s Note)
Instructions
- In a small bowl, whisk the ricotta cheese and yogurt together until smooth. In each parfait glass, layer 2 tablespoons of the ricotta mixture, 1 tablespoon raspberry jam and 1/4 cup of granola. Repeat the layers. Spread the remaining ricotta mixture on top and garnish with toasted almonds before serving.

I didn’t care for the taste or consistency of this at all. I tend to use ricotta cheese in dishes like lasagna, but thought it would somehow be good with the other ingredients in this parfait. I completely wasted my money.
Love the idea of the recipe. Not crazy about the ricotta mixed with yogurt. I eliminate the ricotta and just use Greek yogurt. My husband loves it this way. It’s now our go to meal for the morning
Wow! Surprisingly good! I have only had ricotta in lasagna or pasta dishes and never in a sweeter dish but these parfaits are delicious! I will be making these again! Great taste and texture. Thanks Giada!
After seeing the show had to try this. Everyone loved this and it held us for a long time. very tasty and easy to make.
Who would of thought mixing ricotta and yogurt, not me. Thanks for the idea! Did the recipe just little bit different; stevia and cinnamon. Husband said, “It taste like cannoli filling”, and he is Italian. Now,I can have my cannoli filling w/o the guilt and my favorite granola. It is for breakfast.
This is such a quick and delicious breakfast. I like using fresh blueberries instead of the preserves.
Absolutely delicious!!! one can add some fresh cut fruit as a layer which makes this recipe even better… I tried experimenting with mango and it tasted yum..
