This dish was passed down to me by some friends from the Island of Reunion. It’s excellent and always a hit with friends. It tastes best when given a day in the refrigerator to allow the flavors to mingle. If desired, top with lemon or lime slices and serve with ice cubes.

Ingredients
- 1 cup water
- 1 chai tea bag
- 3 tablespoons brown sugar
- 8 cups pineapple juice
- 2 cups rum, or as needed
- 1 cup dry vermouth (such as Martini®)
- 3 tablespoons vanilla-flavored syrup
Instructions
- Bring water to a boil in a saucepan; pour into a mug and brew chai tea for 5 minutes. Remove tea bag and mix brown sugar into the hot tea until dissolved. Allow tea to cool for about 10 minutes.
- Mix tea, pineapple juice, rum, vermouth, and vanilla-flavored syrup together in a large punch bowl; stir well. Chill for at least 2 hours before serving.
- If you cannot find Indian chai tea, fill a tea filter or coffee filter with with 4 cloves and 1/4 teaspoon each of black ground pepper, ground cinnamon, ground ginger, and ground cardamom. Infuse this mixture with a regular black tea bag.
