Retro Noodle Soup

As a girl, Ree used to love canned chicken noodle soup, but she would always leave behind the chicken! This homemade soup has the flavor of chicken from the bouillon cube, but no meat. With the addition of linguine, it’s Ree’s perfect comfort food.

Ingredients

  1. 2 tablespoons olive oil
  2. 1/2 small white onion, diced
  3. 2 small stalks celery, sliced thin
  4. One 8.25-can sliced carrots
  5. 2 cloves garlic, minced
  6. 3 cups low-sodium chicken stock
  7. 1 chicken bouillon cube
  8. 6 ounces linguine
  9. 1/2 teaspoon freshly ground black pepper, or more as needed
  10. Kosher salt
  11. 1 lemon, juiced
  12. 2 tablespoons salted butter, cold
  13. 1 tablespoon chopped fresh parsley

Instructions

  1. Heat the olive oil in a medium pot over medium-high heat. Add the onion, celery, carrots and garlic. Stir and let cook to soften, 2 to 3 minutes. Add the stock and bring to a boil. Add the bouillon cube, lightly breaking it up as you add it. Add the pasta and cook, stirring, until the noodles are al dente, 7 to 8 minutes. Remove from the heat. Add the pepper, salt, lemon juice and butter, then stir to incorporate. Taste and adjust the seasoning as needed. Garnish with the parsley to serve.

Perfect!!! I loved it so much and so easy to make! I got sick and it was truly healing. I used veggie spaghetti and it held up really good with re heating. I will be making this again. I can’t wait to try the grilled cheese. Thank you!

Hubby and I made this on December 10. Super quick and easy. Pre-cooked the noodles to 75% and transferred to a crockpot. Added rotisserie chicken. The taste was perfect.
