Ingredients
- 1 (2 pound) package frozen hash brown potatoes, thawed
- 1 (10.75 ounce) can condensed cream of chicken soup
- 2 cups shredded Cheddar cheese
- ½ cup chopped onion
- ½ cup butter, softened
- 1 teaspoon salt
- ½ teaspoon ground black pepper
Instructions
- Preheat the oven to 350 degrees F (175 degrees C). Spray a 9×13-inch dish with nonstick cooking spray.
- Gently mix potatoes, soup, cheese, onion, butter, salt, and pepper in a large bowl. Pour into the prepared dish.
- Bake in the preheated oven until browned, about 1 hour.

Simple and classic. Goes with everything
This is my go to recipe for every holiday potluck. The only thing I do different is cook the onions on the stove with the butter to get it melted and the onions soft. I like colby better than cheddar and it comes out better than cracker barrel’s!
1 used extra sharp cheese. We loved it! May add bacon next time.
Cracker Barrel actually uses colby cheese, not cheddar. The rest of the ingredients are spot-on. We mixed the soup, cheese, onion, margarine, salt & pepper together and then added the frozen potatoes and do not overmix.
Made this with sloppy joes last night…. Big hit! Everyone, even teenagers, loved it.
This looks wonderful, but can you freeze it?
I switched the cheese to Colby Jack. I added the condensed soup last so i could pull out the chicken chunks before mixing. I cook it for 1 hr and 25 min to get it a little crunchy on top. This dish is awesome, great for breakfast or brunch bc u can prep it the night before. We have it for dinner sometimes too. Very easy.
This was very good. This will be my recipe for hash brown casserole here on out. I forgot to take the hash browns out of the freezer to thaw, so I just put them in a bowl and microwaved them for 3 minutes. Worked perfectly! The only other changes I did was I reduced the butter to 2 Tablespoons and I also added 8 ounces of sour cream.
Delicious! I made it on the lower rack with 3 other dishes which sort of burned the bottom and it was more of a hit than it was the normal way! Both ways were loved by all! Yum, yum, yum!
Bland and greasy. Floating in fat. If this is a near five star dish it makes me really wonder what people are thinking. I could fiddle with this and make it better but I think it is best to just move on.
No changes, made for Christmas party
Made this for dinner tonight with a little tweaking. I thawed the hash browns first.Instead of real onion I used dehydrated onion . ( learn from my mistake, if you do this, omit the salt) I added about 1/4 c of sour cream and instead of adding the melted butter , poured it on top. 350 for one hour then a few minutes under the broiler. My family loved it.
It was ok. It was missing something.. perhaps garlic? We have leftovers. I am planning on turning them into “potato pancakes” and frying them in a little olive oil..
I made this but did not include the onions, and I did real potatoes shredded. Came out pretty good but kind of dry…maybe from the potatoes I used
Made this for dinner last minute and it was a hit. I just used any type of cheese I could find in my fridge, and I added some panko bread crumbs on top. I used like 3lbs instead of two (3/4th of the 4lbs bag I had). Still worked out great. Microwaved to defrost like one of the comments suggested. It’s super yummy ma dude.

Bobbie O’Brien Hi this is a good recipe. I’ve made it with your recipe and then I altered it to add a whole chopped onion and I had to cook it for 45 min to get it crispy on top. The next time I put it on 450 and stirred half way thru. But now I’ve read my chappell’s comments and it makes sense I’ll try that today. But please don’t be down from these suggestions your basic recipe is great!
