These chicken nachos are tasty, simple to make, and guaranteed to be a hit! enough substance for a meal. The chicken topping, which also works well as a filler for tacos and quesadillas, contains the dish’s main characteristics. Although sour cream and guacamole are my top recommendations, feel free to get creative!

Ingredients

  1. 3 tablespoons canola oil
  2. 6 green onions, sliced, white parts and tops separated
  3. 2 cloves garlic, crushed
  4. 1 shredded, cooked, whole chicken breast
  5. salt and pepper to taste
  6. 1 cup salsa
  7. ½ (12 ounce) package tortilla chips
  8. 1 (8 ounce) package shredded Cheddar/Monterey Jack cheese blend
  9. ½ large tomato, diced

Instructions

  1. Gather all ingredients.

  3. Preheat the oven to 350 degrees F (175 degrees C).
  4. Heat oil in a deep 12-inch skillet over medium heat. Add white parts of the green onions and garlic; cook and stir until onions are just tender.

  6. Mix in shredded chicken, salt, and pepper; toss until well coated. Stir in salsa.

  8. Arrange tortilla chips on a large baking sheet. Spoon chicken mixture over tortilla chips; top with shredded cheese and tomato.

  10. Bake in the preheated oven until cheese has melted, about 10 minutes. Remove from heat and sprinkle with green onion tops before serving.

Great base recipe, even better if you jazz it up with adding black beans, frozen corn and a little seasoning (like taco seasoning) to the chicken mixture. Speaking of chicken, I used plain rotisserie chicken, quick and easy! After you remove from oven and plate it, add toppings like fresh sliced jalapeno’s, cilantro, guacamole (store bought is fine), and sour cream. A squeeze of fresh lime juice after it’s plated really made it special too! With the tweaks, it was absolutely amazing, will make again and again!

I use white meat from a rotisserie chicken to make it easier. I also used cherry tomatoes and sliced up black pitted olives. We love this.

Nachos, I don’t care if they are chicken or beef, are a blank slate, and begin with a great basic recipe such as this one, which establishes great flavors. Then it’s up to you and your family to customize with what you enjoy. Each of my family members customizes this basic recipe I make first as they like it and pop their version into the air fryer and, viola! I won’t bore you with our customizations. This recipe is a 5 star “go to” for us!

Yummy way to use leftover store bought rotisserie chicken. Very good recipe! Tip 1: use a sturdy dinner fork to shred chicken while it’s still cold (right out of the refrigerator) Tip 2: be careful when seasoning; store bought rotisserie chicken’s are normally already well-seasoned Thank you!
