This is my favorite recipe, and it works well for last-minute treats. It only takes a few minutes to make these wonderful box cake cookies! My favorite cookies are these.

Ingredients

  1. 1 (15.25 ounce) package red velvet cake mix
  2. 2 large eggs
  3. ½ cup vegetable oil
  4. ½ (11 ounce) package chocolate chips

Instructions

  1. Preheat the oven to 350 degrees F (175 degrees C).
  2. Mix cake mix, eggs, and oil together in a bowl until well mixed; fold in chocolate chips. Roll dough into 24 balls and arrange on an ungreased baking sheet.
  3. Bake in the preheated oven until lightly browned around the edges, 7 to 9 minutes.
  4. Cool on the baking sheet 2 to 3 minutes before transferring to a wire rack to cool completely, 15 to 20 minutes.
  5. For different flavors of cookies, use different chocolate chips and cake mixes!

I use two boxes of Jiffy’s yellow cake mix (9oz each). I tried other brands and did not have same outcome. I live in Denver, so had to add 2 Tbl of flour to the mix (high altitude baking necessity!). Also, added 1/2 tsp of lemon extract. Baking took only 7 mins. These are tasty! My spouse loved the Jackson’s Jumble Lemon Cookies forever and we’ve not located them anywhere over the past years. These take the place for him just fine!

I made as per directions, the bake time was almost double what is claimed. the cookies were crisp and tasty and after being stored with a slice of bread over night, they became very soft and chewy. I will make this again for sure.

This recipe is not only great for a quick treat, but also helpful for when you forgot all about a potluck you signed up for!! I’ve seen a lot of Cake Mix Cookie recipes, but I like this one because it calls for 15.25oz box of cake mix, which is usually what “dollar stores” carry, which is usually where I run to, when I need something at the last minute haha!! I lowered the oil to 1/3 cup, only because I prefer the taste/texture to the 1/2 cup. I’ve made these with various cake flavors and mix-ins (again, whatever is in stock at the dollar store). I’ve also used either a “kiss”, or powdered sugar on top, in lieu of a mix-in. Any which way I’ve made them, they’re always, quick, easy, low-cost, and a big hit with everyone!!

I didn’t have any oil so I used 1/2 C of unsweetened applesauce. I also added a teaspoon of orange extract with the chocolate chips. I felt the batter was bit thick but they turned out wonderful! I will definitely use this recipe to build of off to make other types of cookies. Thanks!

PERFECT! I used chocolate cake mix and didn’t have chips. These came out soooooo moist. And soooooo good, not to mention super easy. They were more brownie-like than cookies, but that’s just fine with my kids and me.

The flavor and texture are yummy. I made recipe as written. The only thing that I’m confused about is it said to roll them in 12 balls. They ended up being huge! I think it could’ve made 24 smaller cookies instead. Otherwise, good recipe.

I’ve been using Allrecipes forever and this is my first review because these cookies are AMAZING! I made them EXACTLY as directed and they came out PERFECT! Devils food cake mix with white chocolate chips. YUM! Will definitely be making these again as they are a huge time saver and they’re delicious!

I made these this morning using lemon cake mix and white chips I doubled the recipe and added 2 teaspoons of baking powder ( only because I had read a recipe that added baking powder so thought I would give it a try)and 2 teaspoons of lemon extract I also put the dough in the refrigerator for about an hour, rolled them in powdered sugar and they turned out perfect, chewy in the middle and moist and did not taste like cake mix. I cannot wait to try different flavors. Great recipe thanks for sharing!

These turned out great! At first I didn’t think they would turn out because I don’t have chocolate chips but I just rolled mine in powdered sugar and they made great little cookies!

Simple & tasty. I used Triple chocolate cake mix, 1/2 C oil. 2 lg eggs, 2 tsp water & 1 C andes mint chips. Ten mins in 350 degree oven. I did drop by tsp & press down with little greased glass bottom. Exactly 24 cookies my husband loved. He did mention that it was plenty of mints too. I warned him too many would make him sick, lol. He never listens! I will make again but with chocolate chips & walnuts.

I noticed your picture of this recipe shows chocolate cookies with what appears to be white chocolate chips so that’s what I used. Great easy cookies.
