Ingredients

  1. 1 pound red potatoes, scrubbed, but not peeled
  2. 1 tablespoon honey
  3. 1 tablespoon Dijon mustard
  4. 1 tablespoon whole grain mustard
  5. 1 tablespoon olive oil
  6. 1 1/2 teaspoons cider vinegar
  7. 2 scallions, green and white parts, sliced
  8. 1 rib celery, diced
  9. 2 tablespoons chopped fresh dill
  10. Salt and pepper

Instructions

  1. Dice the red potatoes into 1/2-inch cubes and place in a pot of cold water. Bring the potatoes to a simmer over high heat and cook until tender, about 10 minutes. Once the potatoes are tender, when pierced with a knife, drain and transfer to a large bowl.
  2. To the bowl with the potatoes add the honey, mustards, oil and vinegar. Add the scallions, celery and dill, then toss everything with the honey mustard dressing. Season with salt and pepper and serve.
